To make these low calorie cinnamon roll pancakes you will need:
- Egg – This recipe requires just 1 small egg. The egg adds structure and helps get the super soft and fluffy texture we love. For a vegan alternative, try flax eggs.
- Stevia or granulated sweetener – Any granulated sweetener will work for this recipe. Stevia is my personal favorite and is the closest in taste to sugar.
- All-purpose flour – This recipe calls for good ol’ all-purpose flour. To make this recipe gluten-free, use gluten-free flour or oat flour.
- Baking powder – The baking powder will help these pancakes rise and a give them a super fluffy texture.
- Vanilla extract – No pancake recipe is complete without a dash of vanilla!
- Unsweetened almond milk – You can use any milk you would like but unsweetened almond milk has the least amount of calories.
- 0 calorie brown sugar – To make the cinnamon-sugar drizzle, I opted for 0 calorie brown sugar. Feel free to use any 0 calorie sweetener for this part.
- Ground cinnamon – No cinnamon roll is complete without cinnamon!
- Philadelphia lightest – To make the low calorie cream cheese frosting, I opted for Philadelphia lightest. It is creamy and thick but super low in calories. This is equivalent to 3% fat cream cheese but you can opt for low-fat cream cheese too.
- 0 calorie icing sugar – 0 calorie icing sugar keeps this recipe sugar-free. If you don’t have any 0 calorie icing sugar to hand, you can make your own by blitzing some 0 calorie sweetener in a food processor! Regular icing sugar works too but it adds a few extra calories.
How to make low calorie cinnamon roll pancakes
- In a medium bowl, whisk together the egg and stevia until light and fluffy. Whisk in the milk and vanilla extract then sift in the flour and baking powder. Whisk until well combined. Let the batter rest for a few minutes.
- In the meantime, in a small bowl, make the cinnamon-sugar drizzle by mixing together the milk, 0 calorie brown sugar and ground cinnamon until well combined. Set aside.
- In another small bowl, whisk together the cream cheese and 0 calorie icing sugar until smooth. Set aside.
- I recommend using a non-stick pan so you don’t need to use any oil/butter for the pan. Scoop 1/4 cup of batter onto a hot, non-stick pan, swirl in the cinnamon-sugar drizzle and cook over medium heat until bubbles form on the surface , about 1-2 minutes, then flip over. Cook the other side for an additional 1-2 minutes. Repeat this until all of the batter is used up.
- Top the pancakes with the cream cheese frosting and enjoy!
TOP TIPS
Don’t over mix the batter – Use a whisk to combine the ingredients and to avoid big lumps. Be careful not to over mix the batter as this will lead to dry rubbery pancakes. Instead, whisk together the wet ingredients and brown sugar alternative until smooth then sift in the dry ingredients. Whisk until just combined.
Let the batter rest – If you have the time, I recommend letting the pancake batter rest for 15-30 minutes before cooking. This makes for lighter and fluffier pancakes as the flour has time to absorb the liquid.
Use a non-stick pan – I love using a non-stick pan to cook these pancakes. You don’t need any oil or butter to lubricate the pan! The pancakes also don’t stick to the pan which is just *chef’s kiss*.
