Recipe details
Zucchini, also known as Courgette, is high in antioxidants, vitamin B12 and promotes healthy digestion! And whilst zucchinis are healthy and delicious, it isn’t a replacement for potatoes. The key to sustainable weight-loss is balance!
This recipe is just a fun alternative to switch up snack time! It is really easy to make and can be ready with little fuss, time and effort.
Texture – These tots are very slightly crispy on the outside an super tender an soft on the inside. If there is remnants of water left in the zucchini before baking, the tots can come out a little softer. Don’t worry if you have a little extra water though, are still just as delicious!
Effort – The most effort this recipe requires is grating a zucchini! This recipe requires no special equipment or ingredients. Anyone can follow this recipe and have delicious and tender tots each and every time.
Ingredients
- Zucchini – The star of the show. Zucchini is replacing the potatoes which we see in classic tater tot recipes. Zucchinis are packed with vitamins and fiber so are the perfect way to spice up your tater tot experience!
- Egg – The egg holds the tots together.
- Breadcrumbs – Breadcrumbs are perfect for absorbing any left over moisture in the zucchini. Plus, they add a delicious texture to the tots!
- Light cheese – Adding a little light cheese adds some flavor without adding too many extra calories.
- Spices – The best part about this recipe is you can season it to your taste! I love to add a little paprika, garlic granules, dried vegetable stock and coriander powder.

Top tips to make the best low calorie zucchini tots
- Squeeze as much water out of the zucchini as you can. I love to use a kitchen towel to remove all of the excess water. Having too much left in the tots can make them soggy when baked!
- Let the grated zucchini sit – If you have any extra time, let the grated zucchini sit on a paper towel for 10-15 minutes. This helps absorb any extra water that was left behind!
