Ingredients
Exact ingredient quantities can be found at the bottom of this page.
- All-purpose / plain flour – This recipe calls for plain/all-purpose flour. To make this recipe gluten-free, opt for gluten-free flour or oat flour.
- Applesauce – Applesauce is a great alternative to eggs and butter. This helps keep the calories super low whilst giving the cookie dough some hold and shape.
- 0 calorie brown sugar – You can use any granulated sweetener for this recipe but brown sugar works best.
- Vanilla extract – No cookie dough recipe is complete without a hint of vanilla!
- Dark chocolate chips / chunks – I used regular chocolate chips for this recipe. Feel free to use any variation of chocolate you would like for this recipe! For a completely sugar-free cookie dough, opt for sugar-free chocolate chips or chunks!
- Unsweetened Cocoa powder – For the double chocolate fudge flavor, I used unsweetened cocoa powder. It has a very rich chocolate flavor with very few calories.
- Sugar-free sprinkles – The sugar-free colored sprinkles are for the birthday cake cookie dough.
How to make low calorie edible cookie dough
This cookie dough is super easy to make in juts a few simple steps! You can choose from regular cookie dough, double chocolate fudge and birthday cake!
How to heat treat flour
- Pre-heat oven to 180°C (356°F).
- Pour the flour onto a prepared baking tray and spread until there is a thin layer across.
- Bake for 5-7 minutes, or until a instant read thermometer reads 74°C (165°F).
Alternatively, you can speed this process up by using a microwave. In a microwave safe dish, microwave the flour on high in 30 second spurts. After 30 seconds, mix the flour and microwave again for 30 seconds until the flour registers at 74°C (165°F).
Classic cookie dough
- In a medium bowl, mix together the dry ingredients.
- Mix in the wet ingredients until well combined.
- Fold in the chocolate chunks/chips, serve and enjoy!
Double chocolate fudge cookie dough
- In a medium bowl, mix together the dry ingredients.
- Mix in the wet ingredients until well combined.
- Fold in the chocolate chunks/chips, serve and enjoy!
Birthday cake cookie dough
- In a medium bowl, mix together the dry ingredients.
- Mix in the wet ingredients until well combined.
- Fold in the chocolate chunks/chips and the sprinkles.
- Serve and enjoy!
Tips & storage
Do not bake this cookie dough – This cookie dough is not made to be baked. The lack of fat and leavening agent will produce a flat and dense cookie!
Microwave the flour – To make this cookie dough in just 5 minutes, microwave the flour until it registers 74°C (165°F). This should take about 3 minutes (dependent on the microwave though)!
Use powdered sweetener – If you don’t mind the grittiness of the sugar in cookie dough, then granulated sweetener is fine to use! If you want a smoother texture, I would recommend powdered sweetener.
Storage
This recipe is single serve so you likely won’t have any leftovers but if you do, or you want to make ahead, this cookie dough will keep in the fridge for up to 3 days.
