To make this low calorie edible cookie dough you will need:
All-purpose / plain flour – This recipe calls for plain/all-purpose flour. To make this recipe gluten-free, opt for gluten-free flour or oat flour.
Unsweetened applesauce – Applesauce is a great alternative to eggs and butter. It adds moisture and holds the cookie dough together for barely any calories! Make sure you used unsweetened applesauce to keep the calories low and avoid over sweetening this cookie dough.
0 calorie brown sugar – You can use any 0 calorie granulated sweetener for this recipe but brown sugar alternative has the perfect texture for this cookie dough.
Vanilla extract – No cookie dough recipe is complete without a hint of vanilla!
Dark chocolate chips / chunks – I used regular dark chocolate chips for this recipe. Feel free to use any variation of chocolate you would like for this recipe! For a completely sugar-free cookie dough, opt for sugar-free chocolate chips or chunks!
Unsweetened Cocoa powder – If you’re a chocolate lover, you’ll need good quality unsweetened cocoa powder to make the chocolate fudge version of this recipe.

Tips & storage
Do not bake this cookie dough – This cookie dough is not made to be baked. The lack of fat and leavening agent will produce a flat and dense cookie. If you want a baked cookie, this low calorie chocolate chip cookie recipe is the one for you.
Microwave the flour – To make this cookie dough in just 5 minutes, microwave the flour until it registers 74°C (165°F). This should take about 3 minutes in a 700W microwave!
Use powdered sweetener – If you don’t mind the grittiness of the sugar in cookie dough, then granulated sweetener is fine to use. If you want a smoother texture, I would recommend powdered sweetener.
Storage
This recipe is single serve so you likely won’t have any leftovers but if you do, or you want to make ahead, this cookie dough will keep in the fridge for up to 3 days.
