Pour the flour onto a prepared baking tray and spread until there is a thin layer across.
Bake for 5-7 minutes, or until a instant read thermometer reads 74°C (165°F).
Classic cookie dough
In a medium bowl, mix together the applesauce and vanilla extract until well combined. Add the flour, 0 calorie brown sugar and salt. Fold until well combined.

Double chocolate fudge cookie dough
In a medium bowl, mix together the applesauce and vanilla extract until well combined. Add the flour, unsweetened cocoa powder, 0 calorie brown sugar and salt. Fold until well combined.

Birthday cake cookie dough
In a medium bowl, mix together the applesauce and vanilla extract until well combined. Add the flour, 0 calorie brown sugar and salt. Fold until well combined.

*Unsweetened applesauce - Can be subbed for an equal amount of low-fat butter or pumpkin puree but the calories, taste and texture will differ. *0 calorie brown sugar - can be subbed for any 0 calorie sweetener but be mindful of the conversion. The sweetener I used has a 1:1 ratio of sweetener to sugar. Do not bake this cookie dough - This cookie dough is not made to be baked. The lack of fat and leavening agent will produce a flat and dense cookie!Microwave the flour - To make this cookie dough in just 5 minutes, microwave the flour in 30 second spurts until it registers at 74°C (165°F). This should take about 3 minutes (dependent on the microwave though)!Use powdered sweetener - If you don't mind the grittiness of the sugar in cookie dough, then granulated sweetener is fine to use! If you want a smoother texture, I would recommend powdered sweetener! If you don't like the grit of granulated sweetener in cookie dough, powdered sweetener is the perfect alternative!

This recipe is single serve so you likely won't have any leftovers! If you do, or you want to make ahead, this cookie dough will keep in the fridge for up to 3 days.
