To make these low calorie tiramisu cookies you will need:
Unsweetened applesauce – Applesauce is a great alternative to fats in baking like butter and eggs. Unsweetened applesauce doesn’t contain any added sugar so it’s lower in calories which is perfect for low calorie baked goods. You could replace applesauce with low-fat butter if you can’t get your hands on any applesauce.
0 calorie brown sugar – Any 0 calorie sweetener will work for this recipe but I recommend using a 0 calorie brown sugar alternative like this one.
Vanilla extract – Is a cookie recipe really complete without vanilla?
Plain/all-purpose flour – This recipe calls for plain/all-purpose flour. You can opt for gluten-free flour here to make these cookies gluten-free.
Baking soda – To help the cookies rise and spread.
Salt – A sprinkle of salt to balance the sweetness.
Espresso – It wouldn’t be a tiramisu cookie without the espresso! You can use freshly brewed coffee, ground instant coffee or espresso here.
Philadelphia lightest – To make the cream cheese frosting. You can opt for low-fat cream cheese if you can’t get Philadelphia lightest. Opt for a dairy-free cream cheese to make these cookies dairy-free and vegan.
0 calorie powdered sweetener – A little to sweeten the frosting. You can make your own by blitzing any 0 calorie sweetener in a food processor or an even better hack is to use a coffee grinder if you have it. It works really well to make powdered sweetener!
Unsweetened cocoa powder – A little cocoa powder to dust the cookies with!
Instructions
- Pre-heat oven to 180ºC (356ºF).
- In a medium bowl, make the cookie dough by mixing together the 0 calorie sweetener, apple sauce, espresso and vanilla extract. Fold in the flour, baking soda and salt until well combined.
