In a medium bowl, make the cookie dough by mixing together the 0 calorie sweetener, apple sauce, espresso and vanilla extract.
Fold in the flour, baking soda and salt until well combined.
Divide the batter equally between 3 cookie dough balls. Place the cookie dough balls onto a baking tray lined with parchment paper and bake for 10 minutes. Allow the cookies to cool completely on a cooling rack.
In the meantime, mix together the cream cheese, powdered sweetener and vanilla extract until smooth. Transfer the frosting to a piping bag fitted with a nozzle and pipe onto the cooled cookies.
Using a sieve, dust the cocoa powder onto the cookies, covering the frosting completely.

*Applesauce - You can substitute an equal amount of melted low-fat butter. *Philadelphia lightest - You can substitute an equal amount of low-fat cream cheese. *0 calorie powdered sweetener - You can either use an equal amount regular icing sugar or you can make your own by grinding granulated sweetener in a food processor or coffee grinder. Bear in mind that any substitutions may result in the cookies containing a different amount of calories than stated in this recipe.
