To make these low calorie hot chocolate cookies you will need:
Unsweetened applesauce – Unsweetened applesauce is a great alternative to fats in cookies like butter and eggs. This recipe is eggless and uses a small amount of oil and this combination of applesauce and oil ensures that they stay super moist and delicate whilst maintaining the crispy edges. You can use 1 tsp more oil or replace the applesauce with low fat butter/margarine.
0 calorie brown sugar – Any sweetener will work for this recipe but this 0 calorie brown sugar alternative is my recommendation for any cookie recipe. It emulates the taste and texture of regular brown sugar with 0 calories.
Olive oil – To add moisture and shape to these cookies. Feel free to use any oil of your choosing here.
Vanilla – To add some flavor.
Plain/all-purpose flour – This recipe calls for good ‘ol all purpose flour, known as plain flour in the UK. To make these cookies gluten-free, opt for a gluten-free flour.
Unsweetened cocoa powder – To make these cookies just as rich, indulgent and chocolaty as a hot chocolate, unsweetened cocoa powder is the way to go. It is very dark and rich which is perfect for adding depth and getting that classic ultra chocolaty feel!
Baking soda – To help the cookies spread and rise a little.
Chocolate chips – You can use dark, milk or even white chocolate chips here. I went with dark chocolate chips as they add another layer of really deep, rich chocolate flavor to these cookies. To make these cookies vegan and dairy-free, use dairy-free chocolate chips.
Marshmallows – It wouldn’t be a hot chocolate without marshmallows! I used sugar-free vegan marshmallows but feel free to use regular marshmallows here too.
