  • Pre-heat oven to 180ºC (350ºF). Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, whisk together the applesauce, 0 calorie brown sugar, olive oil and vanilla extract until smooth and well combined.
  • Add in the flour, cocoa powder and baking soda and fold in ensuring everything is well incorporated.
  • Divide the dough equally between 3 cookies, flatten each dough ball in between your palms, place one marshmallow in the centre and roll the dough into a ball.
  • Top with the chocolate chips and place the cookies on the prepared baking sheet. Bake for 8-10 minutes.
  • Allow them to cool on the sheet for a few minutes before transferring to a cooling rack to cool completely. Enjoy!

Notes

*0 calorie brown sugar  If you don’t have 0 calorie brown sugar, you can use any other 0 calorie sweetener but be mindful of the conversion. If it is a 1:1 ratio of sweetener to sugar, use the amount specified in this recipe but if it is 1:2, 1:3 etc of sweetener to sugar, ensure you cut down the amount stated above according to the ratio of your sweetener.
