Low calorie blueberry muffin cookies
This recipe is my petition to start turning muffins into cookies. These low calorie blueberry muffin cookies are the perfect combination of a moist blueberry muffin and a crunchy cookie with a soft centre! These cookies have just 89 calories each and come together in under 25 minutes. I can’t think of a better way to end a long day!

Okay so this cookie has blueberries, a crumbly topping, a soft centre AND crispy edges, all for under 100 calories, did I just create heaven in a dessert? I mean for me, there is no better way to end a long day than with a sweet treat and these low calorie blueberry muffin cookies are the perfect sweet treats to throw together quickly! You only need a handful of ingredients, a couple of minutes and voila, you have the most delicious dessert mash-up to satisfy your sweet tooth!
Now I’m certainly not the genius behind this creation but I did make this cookie under 100 calories whilst still making it irresistibly yummy. Each cookie is not only packed with blueberry flavor, but all the flavors of a blueberry muffin including the classic crunchy top! These cookies pair perfectly with a glass of milk or a cup of tea, they can easily be snack prepped for the entire week and they can be stored in the freezer for a to-go snack anytime you need them! Plus, you can eat all three of these cookies for fewer calories than one regular cookie!

Low calorie blueberry muffin cookies
My low calorie blueberry muffin recipe was my first viral recipe and rightfully so. These cookies are essentially all the flavors of that muffin in cookie form! These cookies have fresh blueberries throughout with a blueberry jam swirl all topped off with a light crumble for added crunch!

To make these low calorie blueberry muffin cookies you will need:
Plain/all-purpose flour – This recipe calls for good ol’ plain flour. You can opt for a gluten-free flour here to keep these cookies gluten-free.
0 calorie sweetener – You can use any 0 calorie sweetener for this recipe but I always recommend this 0 calorie brown sugar alternative for cookies.
Baking soda – To help the cookie spread and rise.
Unsweetened applesauce – Applesauce is the perfect way to replace any oils or butters as well as eggs in baking. In this case, it is replacing the eggs.
Oil – A little oil goes a long way to keep these cookies soft and moist.
Vanilla – No cookie recipe is complete without a hint of vanilla!
Fresh blueberries – You want to use fresh blueberries for these cookies. If you only have frozen blueberries, set them in the fridge to defrost overnight before using them. Make sure you pat them dry before incorporating into the cookie dough to remove any excess water.
Low-fat butter – A little low-fat butter is required to make the crumbly topping for these cookies.
How to make low calorie blueberry muffin cookies
- Pre-heat oven to 180ºC (356ºF).
- In a small bowl, microwave half of the blueberries until they are hot. This took me around 45 seconds to achieve in my 700W microwave. Mash the blueberries and then add 1 tsp of 0 calorie brown sugar. Mix well to combine and set aside.
- In another small bowl, combine the softened low-fat butter, 1 tbsp of 0 calorie brown sugar and 10g of flour. Use the back of a spoon to cream them together. Then go in with your fingers to create a crumble texture, forming small clumps. Set aside.
- In a medium bowl, whisk together the applesauce, vanilla and 0 calorie brown sugar until well combined. Fold in the flour and baking soda until well combined. Fold in the remaining blueberries.
- Form 3 equal balls from the dough and place onto a prepared baking sheet lined with parchment paper. Flatten each cookie dough ball, scoop some of the jam on top and top with the crumble. Repeat for the remaining two cookies.
- Bake for 12-15 minutes. Allow the cookies to cool slightly on the baking tray before transferring to a cooling rack to cool completely. Enjoy!

- 32 g (4 tbsp) flour
- 30 g (2 tbsp) 0 calorie brown sugar
- ⅛ tsp baking soda
- 20 g (1 heaped tbsp) applesauce
- ¼ tsp vanilla extract
- 60 g fresh blueberries half for the jam
- 1 tsp oil
For the crumble:
- 10 g (2 tsp) low-fat butter softened
- 1 tbsp 0 calorie brown sugar
- 10 g (2 tsp) flour
Instructions
- Pre-heat oven to 180ºC (356ºF).
