This recipe was inspired by my low calorie chocolate chip cookies. They are the perfect low calorie snack – soft, chewy center with crispy edges and ultra delicious! You would never have guessed that they have just 80 calories per cookie! I wanted to make a version of this cookie that is microwave friendly and thought why not make it single serve too?!
It has taken me a long while to perfect this recipe. Single serve desserts are perfect for those in a calorie deficit who worry about overeating or for those just trying to make a quick snack they don’t need to store. This chocolate chip cookie requires no baking and just 5 ingredients!

The best part is, you don’t need to wait around for this cookie to bake. It can be ready in under 1 minute. The only challenge with this recipe will be stopping yourself from making this 5 times a day, it is that good.

To make this low calorie microwave cookie you will need:
- Flour – I used regular plain/all-purpose flour. For a gluten-free version, try gluten-free flour or oat flour. This cookie works with oat flour but it is a little tougher in texture.
- 0 Calorie brown sugar– Okay so I am seriously obsessed with 0 calorie brown sugar but you can opt for good ‘ol stevia or any 0 calories granulated sweetener. I’ve found 0 calorie brown sugar to produce the best cookie texture though!
- Baking soda – Baking soda will help the cookie spread and rise.
- Philadelphia lightest – The secret to making this cookie super soft, moist and chewy is cream cheese! I used Philadelphia lightest as is it super low in calorie but still gives a soft and creamy texture. You can opt for light cream cheese if you don’t have access to Philadelphia lightest – this will make the cookie 96 calories which is still great! For a vegan alternative, you can use vegan cream cheese.
- Chocolate chunks or chips – This recipe calls for a small amount of chocolate. I like to alternate between milk chocolate and white chocolate chunks (I just chop up 1 small chocolate square). You can use any chocolate of your choosing, though. To make this recipe completely sugar-free, you can use sugar-free chocolate chips. For this recipe to be vegan, make sure to use vegan chocolate chips or chunks.
HOW TO MAKE A LOW CALORIE MICROWAVE COOKIE
This cookie is seriously so easy to make! You can have it ready in just 3 simple steps.
- In a small bowl, mix together all the ingredients except the chocolate chunks/chips until well combined.
- Fold in the chocolate chips and shape the dough into a ball. Place onto a piece of parchment paper and flatten slightly to form a circular cookie shape. Microwave on high for 30-60 seconds, depending on your microwave*.
- Remove from the microwave and allow 1-3 minutes for the cookie to cool before enjoying!
*For reference, this cookie took 45 seconds to be done in my 700W microwave.
For best results, microwave in 10-15 second bursts. This decreases the chances of this cookie burning which can happen very easily so be sure to keep a close eye on the microwave!
Top tips
Measure carefully – This recipe requires spoon measurements which can be a little tricky. The best way to ensure you have the correct measurements is by scooping a heaped spoonful of the ingredient and using the flat end of a knife to level it out.
Watch the microwave – This cookie can very easily burn or over cook so keep a close eye on the microwave! I like to use 10-15 second bursts, you will know that the cookie is done when it is completely dry to touch. Microwave for 10-15 seconds, gently tap the cookie to see if it is wet, then place back in the microwave if it is. The cookie should still be soft so be sure to not overdo it.
Allow the cookie to cool – This cookie will be very soft straight out of the microwave so be sure to let it cool and firm up. The sweet spot is around 3 minutes when it is still soft and warm, but it is firm enough to pick up.

How do I store this cookie to make ahead?
Unlike baked cookies, this cookie unfortunately won’t store very well. It will get harder as time goes on. This recipe is so simple and easy that you won’t actually need to make this cookie ahead. What can I replace the cream cheese with?
I have tried several different alternatives and applesauce is going to be your best bet when substituting the cream cheese in this recipe. You can use 0% fat yogurt in a pinch but the cookie can come out really moist and fall apart easily.
I don’t have a microwave, how can I make this cookie?
You can easily make this cookie in the oven or air fryer.
To oven bake:
- Pre-heat oven to 180°C (356°F).
- Place the cookie on a piece of parchment paper on a baking tray. Bake for 6-8 minutes.
- Cool the cookie on the parchment paper for 1-3 minutes before transferring to a cooling rack to cool completely.
To bake in an air fryer:
- Pre-heat air fryer to 150°C (300°F).
- Place the cookie on a piece of parchment paper and bake for about 5 minutes.
- Cool the cookie on the parchment paper for 1-3 minutes before transferring to a cooling rack to cool completely.

Ingredients
- 1 tbsp + 1 tsp plain or all purpose flour
- 1-2 tsp 0 calorie brown sugar
- 1/8 tsp baking soda
- 1 tbsp Philadelphia lightest or light cream cheese
- 5 g chocolate chunks/chips
Instructions
- In a small bowl, mix together the flour, stevia and baking soda. Fold in the cream cheese until fully combined and then fold in the chocolate chips/chunks.
- Form into a ball and place onto parchment paper or a microwave safe dish. Flatten the ball slightly until it is cookie shaped.
- Microwave in 10-15 second bursts until the cookie has spread a little and is dry to touch. The cookie should be firm but still soft. (This took 45 seconds in a 700W microwave).
- Let the cookie cool for 1-3 minutes before enjoying.
