Making a quick and low calorie snack just got 10 times easier! This low calorie 1 minute chocolate chip cookie is perfect as a quick snack when in a calorie deficit. It is super soft, chewy and delicious for just 78 calories!
In a small bowl, mix together the flour, stevia and baking soda. Fold in the cream cheese until fully combined and then fold in the chocolate chips/chunks.
Form into a ball and place onto parchment paper or a microwave safe dish. Flatten the ball slightly until it is cookie shaped.
Microwave in 10-15 second bursts until the cookie has spread a little and is dry to touch. The cookie should be firm but still soft. (This took 45 seconds in a 700W microwave).
Let the cookie cool for 1-3 minutes before enjoying.
