These low calorie mini pavlovas could not be easier to make. I know that meringue can be a little finicky and sometimes impossible, but this recipe is super simple and requires just 6 ingredients!

To make these low calorie mini pavlovas you will need:
- Egg whites – Egg whites have special proteins in them which is what makes them expand and provide the structure for the meringue. Plus, they’re high in protein and low in calories and fat!
- 0 calorie icing sugar – This recipe is free of added sugars – yay! Typical meringue recipes use granulated sugar to help the egg whites get super fluffy. Unfortunately, 0 calorie granulated sweetener hasn’t worked as well for me so 0 calorie powdered sugar is the way to go. It’s great at giving meringues a light and airy texture. If you don’t have access to any, blitz your granulated sweetener in a food processor until it’s powdered!
- Philadelphia lightest – Philadelphia lightest cream cheese is the perfect cream substitute. It has a very mild flavor so it takes on the flavor of any other ingredients that are added. It is also very low in calories!
- Vanilla extract – Vanilla extract adds a delicious touch to the cream cheese and gives it a vanilla-cream like flavor.
- Fresh berries – Fresh berries are the best topping for any pavlova. They’re refreshing and compliment this sweet dessert very well.
How to make low calorie mini pavlovas
These pavlovas may seem difficult and have quite a few steps, but it’s actually really simple and easy to put together!
- Pre-heat oven to 150°C (300°F).
- Beat egg whites (on the highest speed) in a medium bowl until white and fluffy, about 1 minute.
- Add in the powdered sugar 1/3 at a time and whisk for around 3 minutes after each addition. Beat until stiff peaks form, about 10 minutes total.
- Pour the meringue mixture into a piping bag. Pipe 5 meringues on a prepared baking sheet and push the middle down with a spoon to form a well-like shape.
- Bake the meringues for 30 minutes then turn the oven off and let the meringues cool in the oven for 1 hour.
- Pipe on the cream cheese, top with berries and enjoy!
Tips to make the best mini pavlovas
- Whisk, whisk, whisk! – The reason many meringues fail is because they haven’t been whisked for long enough! Different whisks take different amounts of time so use 10 minutes as a reference. Keep whisking until stiff peaks form, this means that the mixture should be able to stand up straight when lifted. Even if it means whisking for a few extra minutes, make sure the egg whites are whipped to perfection!
- Use only egg whites – Make sure that no yolk gets into the egg whites. The yolk can change the texture of the meringue and it will make whisking difficult! To make sure no egg yolk gets in, separate the egg whites and egg yolks into different bowls.
- Keep an eye on the oven – To ensure meringues come out of the oven white, make sure they’re not in any oven hotspots. I’ve had the nightmare of burning meringues, my top tip is to place the mini meringues on the bottom shelf of the oven right in the middle!

- 150 g Philadelphia lightest cream cheese
- 1 tsp vanilla extract
Toppings
- 20 g strawberries chopped
- 30 g raspberries
- 20 g blueberries
- 5 mint leaves

- Transfer the meringue mixture into a piping bag. Pipe 5 meringues on a prepared baking sheet and push the middle down with a spoon to form a well-like shape.
