To make these low calorie Oreo filled crepes you will need:
- All-purpose flour – This recipe calls for good ol’ all-purpose flour. To make this recipe gluten-free, use gluten-free flour or oat flour.
- Stevia or 0 calorie sweetener – Any granulated sweetener will work for this recipe. Stevia is my personal favorite and is the closest in taste to sugar.
- Unsweetened almond milk – You can use any milk of your choosing but unsweetened almond milk contains the fewest amount of calories making it perfect for this recipe.
- 0% fat yogurt – Yogurt is going to be used to fill the crepes. You can use any variation of yogurt you like as long as it’s 0% fat – otherwise the calories will be more than 270 for this recipe. Opt for vegan yogurt for a vegan alternative.
- Oreos – This recipe calls for one regular Oreo. The biscuit part will be crushed and used to fill the crepes and the Oreo filling will be used to sweeten the yogurt. The original Oreo is vegan so this part doesnt need to be swapped out to make it vegan!
How to make low calorie Oreo crepes
- In a medium bowl, sift in the flour then mix in the sweetener.
- Whisk in the milk until smooth and lump free. Pour 2 tbsp of the batter onto a hot, non-stick pan and cook until golden – about 1 minute. Flip and cook the other side for another minute. Repeat until all of the batter is used up.
- Separate the Oreo and add the filling to the yogurt. Mix until well combined. Crush the Oreo biscuit/cookie until fine.
- Spread 1-2 tsp of the yogurt onto a crepe and top with a sprinkle of Oreo crumbs. Repeat until all of the crepes are filled.
- Serve with a glass of milk or cup of coffee and enjoy!
Top tips
Don’t over-mix the batter – Resist the urge to over-mix the batter as it can result in rubbery, unappealing textures. Instead, sift the flour and whisk gently to combine the wet ingredients until the batter is lump-free. If you still have some lumps, go in with dry hands and squeeze the lumps between your fingers before whisking again to combine. This ensures you don’t overmix the batter whilst giving you smooth and lump-free batter.
Use a non-stick pan – You can eliminate extra calories by using a non-stick pan. I didn’t require any oil or butter to grease my non-stick pan and the crepes slid off very easily! If you don’t have a non-stick pan, use a few 1 calorie sprays to keep the calories low whilst lubricating your pan!
