To make this low calorie tiramisu cake you will need:
Egg – This recipe calls for one medium, room temperature egg. The egg provides structure and moisture to keep this low calorie cake soft and moist. To quickly get a refrigerated egg to room temperature, set in a bowl of warm water for at least 10 minutes.
Stevia or 0 calorie granulated sweetener – You can use any 0 calorie granulated sweetener for this recipe. I used a stevia that is a 1:2 ratio of stevia to sugar meaning it’s twice as sweet as sugar – bear this in mind when using a different sweetener.
0% fat greek yogurt – Greek yogurt is thick and creamy which adds moisture, protein and balances the sweetness of this cake without adding too many calories. You can substitute for an equal amount of any 0% fat yogurt including dairy-free.
Vanilla extract or bean paste – Vanilla bean paste has been my favorite baking ingredient lately. It adds a lovely vanilla flavor and gives baked goods and frosting such a luxurious feel but you can use vanilla extract for this recipe too.
Plain/all-purpose flour – You can substitute for gluten-free flour or oat flour but the texture of the sponge may differ slightly.
Espresso powder – To give the sponge the espresso/coffee flavor. The sponge comes out with a soft and tender crumb so soaking it in coffee would create a soggy/mushy sponge. Adding the espresso powder to the cake batter ensures the entire sponge has a delicious coffee flavor whilst maintaining the soft and fluffy sponge texture.
Baking powder – To help the cake rise.
Light cream cheese – To make the cream cheese frosting. I know a lot of you don’t have access to Philadelphia lightest which is my usual go-to for cream cheese frosting. But light cream cheese is even creamier and richer for just a few extra calories so I went with light cream cheese for the frosting in this recipe.
0 calorie powdered sweetener – To sweeten the cream cheese frosting.
Unsweetened cocoa powder – To dust on the cake after frosting.
