To make these low calorie apple crumble cookies you will need:
Unsweetened applesauce – Very fitting for apple crumble cookies, right? The applesauce works great at adding moisture and helping the cookies keep their shape without adding any butter, oil or eggs.
0 calorie brown sugar – You can opt for any 0 calorie granulated sweetener but 0 calorie brown sugar works great for cozy, spiced recipes. The sweetener I used is a 1:1 ratio of sweetener to sugar so keep that in mind when using a different sweetener.
Vanilla extract or bean paste – A staple in any cookie recipe. A little will be added to the drizzle as well for extra vanilla flavor!
Plain/all-purpose flour – You can opt for gluten-free flour for gluten-free cookies.
Baking soda – To help the cookies spread.
Salt – To balance the sweetness.
Diced apple – The flavor of the apple really shines through in this recipe so make sure you use a delicious apple. I used a royal gala apple as it is my favorite variety.
Light butter – For the crumble. If you don’t have light butter, you can use an equal amount of unsweetened applesauce or regular butter. The calories will change when switching to either but since it’s a small amount, there won’t be too much of a difference overall.
Rolled oats – For the crumble.
Ground cinnamon – To add warmth and spice to the cookies and crumble.
0 calorie powdered sweetener – To make the vanilla glaze. If you don’t have 0 calorie powdered sweetener, you can make your own by blitzing any granulated 0 calorie sweetener in a food processor until fine. You can also use an equal amount of regular powdered/icing sugar for a slight increase in calories.
Unsweetened almond milk – For the glaze. You can use any milk of your choice – the calories will vary slightly.
