Plus, anything that comes together in one bowl and under 30 minutes is a no brainer to me – especially when it tastes this good!

These cookies are truly a work of art – they’re infused with pumpkin, pumpkin spice and then rolled in cinnamon sugar for the perfectly spiced, cozy autumnal cookie. If you’re someone who worries about overeating, recipes like these cookies are honestly perfect for helping with portion control. This is a small batch recipe that yields just 3 cookies – at just 65 calories a cookie, the entire batch has fewer calories than one regular snickerdoodle! What I love about this recipe is that you can also double, triple or even quadruple the recipe if you need more than 3 cookies. So it works great for everyone 😉

To make these low calorie pumpkin snickerdoodles you will need:
0 calorie brown sugar or 0 calorie granulated sweetener – You can use any 0 calorie granulated sweetener to make the cookies but 0 calorie brown sugar adds the perfect flavor and texture to these spiced cookies. The sweetener I used is a 1:1 ratio of sweetener to sugar so bear that in mind when using a different sweetener.
Pumpkin puree – Make sure you use 100% pumpkin puree for the best flavor, whether from a can or a freshly cooked pumpkin.
Oil of choice – Any mild oil will work for this recipe, I used avocado oil.
Vanilla extract or bean paste – To elevate your baked goods, opt for vanilla bean paste.
Plain/all-purpose flour – Opt for gluten-free flour for gluten-free cookies.
Baking soda – To help the cookies spread.
Pumpkin spice – If you love all things pumpkin spice, adding a little to the cookie dough really elevates these cookies. If you don’t like pumpkin spice, you can swap it out for an equal amount of ground cinnamon.
Stevia or 0 calorie granulated sweetener – To make the cinnamon sugar the cookies are rolled in. You can use any 0 calorie granulated sweetener here but be mindful of the conversion. The stevia I used is a 1:2 ratio of stevia to sugar.
Ground cinnamon – For the cinnamon sugar the cookies are rolled in before baking.

How to make low calorie snickerdoodles
- Pre-heat oven to 180ºC (350ºF). Line a small baking tray with parchment paper and set aside.
- In a small bowl, combine the stevia and ground cinnamon until well combined. Set aside.
- In a medium bowl, whisk together the 0 calorie brown sugar, pumpkin puree, oil and vanilla until smooth and well combined.
- Fold in the flour, baking soda and pumpkin spice until well combined.
- Divide the batter evenly between 3 cookie dough balls, roll each cookie dough ball in the cinnamon sugar and place on the lined baking tray.
- Flatten the cookies slightly using the back of a spoon or a rubber spatula and bake for 8-10 minutes.
- Cool the cookies on the baking tray for a few minutes before transferring to a cooling rack to cool completely.
- Enjoy!

These cookies can be stored in an airtight container at room temperature for up to 5 days.
