These low calorie pumpkin snickerdoodles are fall in a cookie! They're soft, spiced to perfection and just 65 calories a cookie - can you think of a more perfect fall dessert? Plus, these cookies are so ridiculously easy to make, they come together in under 20 minutes!
Pre-heat oven to 180ºC (350ºF). Line a small baking tray with parchment paper and set aside.
In a small bowl, combine the stevia and ground cinnamon until well combined. Set aside.
In a medium bowl, whisk together the 0 calorie brown sugar, pumpkin puree, oil and vanilla until smooth and well combined.
Fold in the flour, baking soda and pumpkin spice until well combined.
Divide the batter evenly between 3 cookie dough balls, roll each cookie dough ball in the cinnamon sugar and place on the lined baking tray.
Flatten the cookies slightly using the back of a spoon or a rubber spatula and bake for 8-10 minutes.
Cool the cookies on the baking tray for a few minutes before transferring to a cooling rack to cool completely.
