Breakfast may be the most important meal of the day but it certainly doesn’t have to be the most boring. Spice up your morning oats with this low calorie gingerbread baked oats. This gingerbread baked oats recipe is perfectly spiced, sweet and delicious. This recipe is gluten-free, dairy-free and vegan too!

Baked oats seems to be the new way to enjoy oats these days. I first saw baked oats trending on TikTok and of course as the oatmeal lover I am, I had to give it a go.
Baked oats is the best way to enjoy a ‘dessert’ for breakfast. It is typically made by blending the ingredients and baking them, so simple right?? I was in a calorie deficit at the time and most of the recipe I was finding were 500+ calories! So I started making my own.
Gingerbread is such a classic and delicious flavor that is easy to replicate. I wanted to make a gingerbread flavored baked oats recipe that tastes similar to gingerbread muffins, and it is now easily one of my favorite autumnal breakfast recipes.
Low calorie Gingerbread baked oats
This recipe is honestly one of my all time favorite low calorie breakfast recipes. It is so easy to make and requires just a handful of ingredients to make. This low calorie gingerbread baked oats is delicately spiced, super sweet and tastes like a delicious warm gingerbread muffin!
You can enjoy this breakfast on days where you have a little extra time to dedicate to your breakfast but it is honestly so easy and simple to make that you could throw it together in under 15 minutes.

Ingredients
- Oats – For this recipe I used Scottish porridge oats. But you can use any oats for this recipe. You can also use oat flour if you have it to hand.
- Banana – A mashed banana will give this gingerbread baked oats the perfect cake-like consistency. This recipe has very little fat so the banana acts as a binding agent.
- 0 Calorie Brown sugar – I love to use 0 calorie brown sugar for this recipe but any sweetener would work. You can also use regular brown sugar which works really well with this recipe and adds just a few extra calories!
- Baking powder – This is to help the baked oats rise.
- Cinnamon powder – This enhances the ginger flavor and pairs great with the other spices.
- Ginger powder – This is to give the gingerbread feel to the baked oats.
- All spice – This adds a unique flavor to the baked oats.
- Unsweetened almond milk – Unsweetened almond milk is my favorite milk to use for baked goods. It is really low in calorie but any milk will work for this recipe.
How to make low calorie gingerbread baked oats
- Pre-heat oven to 180°C (356°F).
- Blend all of the ingredients together until smooth.
- Pour the blended oat mixture into an oven-proof dish and bake for 20-25 minutes.
- Top with any garnishes you would like and enjoy!
How to microwave this recipe:
- Blend all of the ingredients together and pour into a microwave safe dish.
- Microwave on high for 1-3 minutes, or until a toothpick inserted into the center comes out clean.
For reference, it took 3 minutes in my 700W microwave.
Top tips
Blending – The secret to getting that delicious cake texture with baked oats is the blending. You can either blend the oats by themselves to make really fine oat flour or you can blend all the ingredients together. Blending the oats alone will give you much smoother and softer baked oats. Use a hand blender if you want to blend all the ingredients together as this will give you the best texture.
Top with banana – I don’t know what it is about baked banana that just elevates this recipe. I like to leave 1/4 of the banana in this recipe and use it to top the baked oats. It’s a really delicious touch to this recipe.
Top with chocolate – Okay so I love to add a little chocolate to this recipe too. It is such a delicious combination I just can’t get enough! My favorite way to do this is by adding 1 chocolate square to the baked oats as soon as they come out of the oven. To keep this recipe sugar-free, you can use sugar-free chocolate.

Gingerbread baked oats
Equipment
- Blender
- Oven-proof dish or microwaveable dish
Ingredients
- 50 g porridge oats
- 100 g banana
- 1 tbsp 0 calorie brown sugar or sweetener
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp all spice
- 50 ml unsweetened almond milk
- 1 chocolate square (optional)
Instructions
- Pre-heat oven to 180°C (356°F).
- Blend all of the ingredients together until smooth and lump-free. Pour into a oven-safe dish.
- Bake for 20-25 minutes or microwave for 3 minutes (see notes).
- Cool the baked oats for 5 minutes, add any toppings you would like and enjoy!
