To make low calorie chocolate pancakes, you will need:
All-purpose/plain flour – This recipe calls for good ol’ all-purpose/plain flour. To make this recipe gluten-free, use gluten-free flour or oat flour.
Stevia or granulated sweetener – Any granulated sweetener will work for this recipe. Stevia is my personal favorite and is the closest in taste to sugar.
Unsweetened cocoa power – To get the classic rich and chocolaty flavor, unsweetened cocoa powder works best. If you don’t have unsweetened cocoa powder, sweetened works too but the calories will be a little higher.
Baking powder – The baking powder will help these pancakes rise and a give them a super fluffy texture.
Egg – This recipe requires just 1 egg. The egg adds structure and helps get the super soft and fluffy texture we love. If you’re looking for a vegan alternative, try aquafaba or flax egg here.
Vanilla extract – No pancake recipe is complete without a hint of vanilla!
Unsweetened almond milk – This recipe calls for a small amount of milk to thin out the batter. You can use any milk you would like but unsweetened almond milk has the least amount of calories.
0% fat yogurt – This is the secret to getting the thick and creamy chocolate sauce. You can use any variant of yogurt that you would like but for this recipe, I went with fat-free greek yogurt. For a vegan alternative, try using dairy-free yogurt.
0 calorie icing sugar – A small amount of 0 calorie icing sugar is necessary to sweeten the chocolate sauce. You can also use regular icing sugar here but the calories will be a little bit higher.
How to make low calorie chocolate pancakes
- In a medium bowl, whisk together the egg, stevia, milk and vanilla extract.
- Sift in the flour, cocoa powder and baking powder. Whisk to combine.
- Heat up a small non-stick pan on medium heat. I recommend using a non-stick pan so you don’t need to use any oil/butter to grease the pan. Pour 1/4 cup of batter onto the hot pan and cook until bubbles form on the surface, about 2-3 minutes then flip over. Cook the other side for an additional 1-2 minutes. Repeat this until all of the batter is used up. This should make around 4-5 pancakes.
- Make the chocolate sauce by whisking together the yogurt, cocoa powder and icing sugar until smooth. Top the pancakes with the sauce and enjoy!
TOP TIPS
Don’t over mix the batter – Use a whisk to combine the ingredients and to avoid big lumps. Be careful not to over mix the batter as this will lead to dry, rubbery pancakes. Instead, sift the dry ingredients and gently whisk into the wet ingredients.
Let the batter rest – If you have the time, I recommend letting the pancake batter rest for 15-30 minutes before cooking. This makes for lighter and fluffier pancakes as the flour has time to absorb the liquid.
Use a non-stick pan – I love using a non-stick pan to cook these pancakes. You don’t need any oil or butter to lubricate the pan which can end up adding a lot of extra calories. The pancakes also don’t stick to the pan which is great!
STORAGE
These pancakes are best served the day they are made but if you want to meal prep them, you can store them in an airtight container in the refrigerator for up to 3 days. Warm them up in the microwave when you’re ready to eat them. Make the chocolate sauce the day you plan to eat the pancakes.
