A lower calorie version of the classic chocolate pancake we all love. These pancakes are fluffy, soft and oozing with chocolaty goodness in every bite!

Ingredients
  

  • 1 small egg
  • 1 tbsp stevia
  • 50 ml unsweetened almond milk
  • ½ tsp vanilla extract
  • 40 g plain or all-purpose flour
  • 15 g unsweetened cocoa powder
  • 1 tsp baking powder

Chocolate sauce:

  • In a medium bowl, whisk together the egg, stevia, milk and vanilla until well combined.
  • Sift in the flour, cocoa powder and baking powder. Whisk to combine.
  • Pour ¼ cup of batter onto a hot, non-stick pan and cook over medium heat until bubbles form on the surface , about 2-4 minutes.
  • Flip over and cook the other side for another 2-4 minutes. Repeat this until all of the batter is used up. This should make around 4-5 pancakes.
  • Make the chocolate sauce by whisking together the yogurt, cocoa powder and icing sugar until smooth.
  • Serve pancakes with the chocolate sauce and enjoy!
