The ultimate no churn sorbet recipe – 3 flavors!
Summer is fast approaching and that means delicious, low calorie sorbets are on the menu! I present to you, the ultimate no churn sorbet recipe! This recipe is absolutely delicious, super refreshing and can be made using literally any fruit of your choosing. Plus, I share three of my favorite flavors so you can sorbet it up this summer!
What is a sorbet?
A sorbet is made by churning fruit and syrup in an ice cream maker. If you’re like me and had no idea that sorbets were churned and not simply blended fruit, this might come as a surprise!
Sorbet’s are made from various fruits and what is called a ‘simple syrup’. A simple syrup is just a mix of water and sugar that is allowed to cool before being added to the fruit mix. This sounds like too much effort for a sorbet (as delicious as they are)!
If you want a sorbet without all the fuss, this is the recipe for you! This recipe is simple, creamy and super delicious each and every time!
The ultimate no churn sorbet recipe
Sorbets are a summertime favorite and it’s always a treat to try exotic flavors when abroad! I went to make my own one day and found that I needed an ice cream machine to do so! I definitely didn’t want to spend hundreds of pounds on an ice cream machine that will be used once or twice a year.
This recipe is super simple and easy to replicate. You only need a handful of ingredients and a mini chopper (food processor)!
Not to mention, this recipe is sugar free and so super low in calories! It is also dairy free, gluten free and vegan.
Recipe details for the ultimate no churn sorbet
This recipe is absolutely delicious and is really easy to make! It takes no more than 15 minutes to have a yummy sorbet ready!
Effort – This recipe doesn’t require much effort at all. You just need to throw your ingredients into a food processor and blend until thick, creamy and lump free!
Calories – The calories for this recipe depend on the fruit you use. You can have a delicious sorbet for as little as 30 calories! There are no calories other than the fruit so whatever flavor you decide to go for, it’ll still be super low in calories!
Texture – The reason sorbets are so creamy and delicious is because they are churned, similar to ice cream. This recipe, although not churned, still gives a delicious, creamy sorbet with a smooth texture! The fruit you use may alter the texture slightly but it’ll still be absolutely delicious you’ll want to make 5 batches!
Ingredients
This recipe is so simple, you only need two ingredients and you’re good to go! Different flavors will require different fruits and so you may need 1-2 more ingredients but even then, 4 ingredients for a no churn delicious creamy sorbet? That’s a winner in my books.
- Frozen fruit of your choice – The beauty of this recipe is that it is entirely customizable. You can use whichever fruits you would like! I have included my favorites in this recipe just so you have a place to start but honestly, mix and match to your hearts content!
- 0 calorie sweetener – Traditional sorbet recipes use a watery-sugar syrup. Although delicious, sugar is really high in calories and adds no nutritional value to foods whatsoever. That’s why this recipe uses stevia instead. It is a natural sweetener so you don’t need to worry about pesky chemicals. Stevia has been my best friend in losing 40kg+!
How to make the ultimate no churn sorbet
You can have a delicious, creamy sorbet ready in literally one super easy step!
- Add your ingredients to a mini chopper (food processor) and blend until smooth.
And that’s it! A little patience is required with the blending, it can take a few minutes to blend up all the frozen fruit. You may need to go in a few times and give it a little nudge or a quick mix to help the blending process.
You could use a blender in a pinch but it may be a little more difficult to blend depending on your blender. I have tried a few different blenders and my Breville active smoothie blender (similar to a nutri-bullet) works well. If your blender is suited to blend frozen fruits though, you should have no problems!
The ultimate no churn sorbet flavors
As stated before, this recipe is completely customizable to you. You can use your favorite fruit or fruit combination or try something new. I have tried a few different flavor combinations and I have found 3 super delicious flavors for you to try!
As I try new recipes, I will add them to this post. Most of my suggestions actually came from my tiktok comments so do share your creations with me!!
Cucumber, Lime juice & Mint
I was doing a mini series on low calorie snacks and created something I thought was really cool and unique. Most people thought it was a little strange but don’t knock it till you try it!
I wanted to try and make a no churn cucumber sorbet as I hadn’t seen it done before plus, cucumbers are super low in calories so I thought it was a great idea. I loved it. So I shared the recipe and got a lot of suggestions. One was to add lime juice and mint and let me tell you, it changed the game for me. It is so so delicious and refreshing!
Taste – If you like cucumber, you will love this recipe. It is super refreshing and cool. It tastes similar to a watermelon slushy with a hint of mint.
Calories – This flavor is the lowest in calories coming in at just 38 calories! That is because cucumber is mostly water and so naturally, it will be very low in calories.
Texture – Out of all the flavors I have tried, this one is probably the least creamy. That is mostly due to the fact that cucumber is almost completely water and so there isn’t really anything to make it creamy. It is still delicious though and has a smooth texture!
Ingredients
- 250g Frozen cucumber slices
- Juice of half a lime
- A few mint leaves
- 2 tbsp. 0 calorie sweetener
How to make this cucumber sorbet
- Freeze cucumber slices for at least 2 hours (overnight is better).
- Add the cucumber, mint leaves, lime juice and stevia to a mini chopper or food processor.
- Blend until smooth. (You may still have a few lumps but that is fine, the cucumber skin can be tough).
- Serve and enjoy!
Strawberry, Mango and Lemon juice
Strawberries are delicious, mangoes are delicious so I thought I would try this flavor combination out and it did not disappoint!
This flavor combination is absolutely divine. It tastes exactly like a sorbet you buy at those cute little pop up shops around Italy.
Taste – This flavor combination is delicious. The mango and strawberries compliment each other very well and the lemon juice adds a little pop.
Calories – This flavor is a little higher in calories than the previous recipe, coming in at 99 calories. It is still super low in calories for the portion size!
Texture – This flavor is considerably more creamy than the cucumber one. It is really smooth and very similar in texture to an actual sorbet.
Ingredients
- 100g Frozen strawberries
- 100g Frozen mango
- Juice of 1/2 a lemon
- 1-2 tbsp. stevia
How to make this strawberry, mango and lemon sorbet
- Freeze mango and strawberry slices for at least 2 hours (overnight is better).
- Add the strawberries, mango, lemon juice and stevia to a mini chopper or food processor.
- Blend until smooth and lump free.
- Serve and enjoy!
Pineapple, Mint & Lemon
This flavor combination was suggested by a follower and oh my, it is insanely delicious!
This is my FAVORITE flavor to date and let me just say, I have never been more grateful for a tiktok comment!
It is so refreshing and delicious, I’m genuinely obsessed.
Taste – It’s hard to describe the taste of this one. All I can say is that it is incredible. If there was anything I would suggest you try, it is this recipe!
Calories – This recipe has the most calories coming in at 130 calories. BUT 130 calories for a delicious, creamy sorbet is a bargain!
Texture – This is the creamiest of them all. This recipe is super creamy and is scarily similar to the texture of ice cream! Not sure what properties are in pineapples that make them super creamy when blended but it is ultra smooth and did I mention, creamy?!
Ingredients
- 200g frozen pineapple
- A handful of mint leaves
- Juice of 1/2 a lemon
- 1-2 tbsp. stevia
How to make this pineapple and mint sorbet
- Freeze pineapple slices for at least 2 hours (overnight is better).
- Add the frozen pineapple, mint leaves, lemon juice and stevia to a mini chopper or food processor and blend until smooth and lump free.
- Serve and enjoy!
Tips to make the ultimate no churn sorbet
- Slice the cucumber really thin – If you decide to make the cucumber sorbet, slice the cucumbers quite thin and in semi-circles. This makes the blending process much easier and prevents having big lumps in the sorbet.
- Use already frozen fruit – It is much easier to use store bought frozen fruit. It’s just much less hassle. I wasn’t able to find frozen cucumbers though so I froze the cucumber myself. All the other fruits were bought frozen.
- Blend until completely smooth – One thing I’ve found with this recipe is that it’s easy to be left with lumps if you don’t blend enough. Blend until you think its done, then check for lumps with a spoon and blend some more!
