Ingredients

To make these low calorie double chocolate fudge cookies you will need:
- All-purpose flour – This recipe calls for regular AP/Plain flour. You can use gluten free plain flour for a gluten free alternative.
- 0 Calorie brown sugar– Any 0 calorie granulated sweetener should work for this recipe. I’ve found 0 calorie brown sugar to produce the best cookie texture!
- Unsweetened cocoa powder – For this recipe I used unsweetened cocoa powder. It has a very rich chocolate flavor with very few calories.
- Baking soda – A little baking soda helps the cookies spread and rise.
- Unsweetened applesauce – Applesauce is a great alternative to eggs and butter. This helps keep the calories super low whilst holding the cookies in shape.
- Olive oil – A small amount of olive oil helps keep the cookie intact and gives it a super soft texture. You can swap out olive oil for any oil you would prefer.
- Vanilla extract – No cookie recipe is complete without a little vanilla!
- Dark chocolate chips – I used regular dark chocolate chips. For an even lower calorie and completely sugar-free cookie, you can use sugar-free chocolate chips!
How to make low calorie double chocolate fudge cookies
- Pre-heat oven to 180°C (356°F).
- Mix the dry ingredients together.
- Fold in the wet ingredients.
- Scoop 3 equal spoonfuls of the cookie dough and form 3 balls. Place onto a prepared baking tray.
- Bake for 8 minutes and let the cookies cool on the baking tray before transferring onto a wire rack to cool completely.
TOP TIPS & STORAGE
- Refrigerate before baking – Chill the cookie dough for 30 minutes before baking for the perfect chewy cookie! Chilled cookie dough also produces a firmer cookie.
- Don’t over-bake – When these cookies come out of the oven, they’ll be very soft and can seem under-baked. But they will firm up and bake more as they cool so avoid over-baking. I find that 12 minutes is perfect for this cookie.
- Don’t over-mix the cookie dough – Fold the cookie dough just so that everything is well combined. Over-mixing the cookie dough can lead to tough and dry cookies.
STORAGE
These cookies can be made ahead and stored in an airtight container for 3-5 days. These cookies are suitable for home freezing, Place them in a zip lock bag and freeze for up to 6 months.
