I spent days on this recipe trying to get it to as few calories as possible without missing out on taste.

It took me a long while to find sweeteners I like the taste of! I typically go for stevia in my low calorie baking as it’s a natural 0 calorie sweetener and it’s easy to find. You can use any 0 calorie or low calorie sweetener for this recipe. If you don’t have any 0 calorie or low calorie sweetener available to you, you can use regular sugar instead but be mindful of the extra calories if you’re calorie counting.
Espresso powder – Espresso and chocolate is a powerful combination. The espresso powder in this recipe enhances the chocolate flavor of this mug cake.

Equipment
- 1 Medium bowl
- 1 Mug
Ingredients
- 60 g 0% fat yogurt
- 30 g all-purpose flour
- 5 g unsweetened cocoa powder
- 4 tbsp 0 calorie sweetener
- 1/2 tsp baking powder
- 1 tsp espresso powder
- 1 tbsp boiling water
Chocolate frosting
- 50 g lightest cream cheese
- 10 g icing sugar
- 1 tsp cocoa powder
Instructions
- Mix all the cake ingredients together in a medium bowl until smooth and there are no lumps.
- Pour the mixture into a mug – you want to ensure your mug has enough room left over for the cake to rise without overflowing.
- Microwave on high for 60s.
- Whilst the cake cools, make the frosting by mixing the cream cheese, icing sugar and cocoa powder.
- Once the cake has completely cooled, top with the frosting and enjoy.
