Low calorie lemon brownies recipe
You are going to be hooked on these low calorie lemon brownies this spring and summer! They are the perfect balance of soft and fudgy, tangy and sweet and topped off with a simple vanilla lemon drizzle!

Petition to make these low calorie lemon brownies – or lemonies?? a thing this spring and summer. I am in love with anything lemon which is probably very apparent on my blog lol. These lemon brownies are so good and perfect for those sunny days when you’re craving something sweet and fruity. They are infused with lemon flavor in every step and as if they could be any more perfect – they’re topped with a zesty vanilla lemon drizzle! Plus, each lemonie is just 48 calories – I mean? This is a perfect recipe if there ever was one.

I know this is not an original idea by any means but I havent been able to find anything like this for under 50 calories. If you have been following me on social media for a while, you know about my lemon fibre one bar obsession (or addiction if we’re being honest). They are so tiny but so so good so it was 100% worth the 90 odd calories! These low calorie lemon brownies have now replaced my lemon fibre ones. I only wish I made this recipe sooner! It is so delicious and satisfying for just 48 calories!
This recipe is super simple too which makes it great as a low effort quick and simple sweet treat. They also make perfect snack prep. You can make a batch and set them aside for a quick grab and go snack throughout the week. Although I love a small batch recipe, especially when I was in a calorie deficit, sometimes it’s nice to have a little sweet treat already prepared for the inevitable lazy days.

Ingredients in low calorie lemon brownies

To make these low calorie lemon brownies you will need:
Egg – Ensure your egg is at room temperature before making these brownies. You can quickly get a refrigerated egg to room temperature by submerging in a bowl of warm water for 10 minutes.
Stevia or 0 calorie sweetener – I recommend using a granulated stevia that works similar to sugar for this recipe. The specific stevia I use is a 1:2 ratio of stevia to sugar meaning half the weight of sugar is required. If you’re using stevia drops or a different brand or sweetener, you will need to consider that and convert according to the specific one you’re using.
Plain/all-purpose flour – You can also opt for gluten-free flour or oat flour in a 1:1 ratio.
Baking powder – A little baking powder to help the brownies rise a little. If you want them extra fudgy, you can skip this part but your brownies may come out a little flatter.
Salt – To taste.
0% fat yogurt – Yogurt is great for adding texture, moisture and helps these brownies come out fudgy and soft. You can opt for low fat yogurt but the calories may differ slightly.
Lemon – We will be using an entire lemon for this recipe. The zest and 1/2 of the lemon juice will go into the brownies and the leftover juice will be used for the vanilla lemon drizzle.
Vanilla – No brownie recipe is complete without vanilla!
0 calorie powdered sweetener – To make the vanilla lemon drizzle, you will need 0 calorie powdered sweetener. You can find a bunch of different ones on amazon or simply make your own by blitzing your granulated sweetener in a food processor for a few minutes.

How to make low calorie lemon brownies
- Pre-heat oven to 175°C (350°F).
- In a medium bowl, rub together the granulated sweetener and lemon zest. Rub until the sweetener has a yellowish tinge to it and it is combined entirely with the lemon zest. Set aside.
- In another medium bowl, whisk the egg until it looks bubbly. Add in the lemon zest and sweetener and whisk until light and fluffy, about 2 minutes.
- Add the yogurt, lemon juice and vanilla and whisk to combine.
- Add in the flour, salt and baking powder and fold until smooth.
- Transfer the batter to a lined 8-inch pan and bake for 15 minutes or until the edges have set.
- Allow the brownies to cool and make the glaze in the meantime by whisking together the 0 calorie powdered sweetener, lemon juice and vanilla until smooth.
- Pour the glaze over the cooled brownies, you can either allow the glaze to set or enjoy nice and moist right away!
Storage
These brownies can be stored in an airtight container for up to 3 days at room temperature. If you want them fresh for longer, store them in an airtight container in the refrigerator for up to a week. You can also freeze these brownies for up to 3 months!

Ingredients
- 40 g stevia or granulated sweetener*
- zest of 1 lemon
- 1 egg room temperature
- 50 g yogurt
- juice of ½ lemon
- ½ tsp vanilla extract
- 90 g flour
- ½ tsp baking powder
- pinch of salt
Vanilla lemon drizzle:
- 30 g 0 calorie powdered sweetener
- juice of ½ lemon
- ¼ tsp vanilla extract
Instructions
