Ingredients
  

  • 40 g stevia or granulated sweetener*
  • zest of 1 lemon
  • 1 egg room temperature
  • 50 g yogurt
  • juice of ½ lemon
  • ½ tsp vanilla extract
  • 90 g flour
  • ½ tsp baking powder
  • pinch of salt

Instructions
 

  • Pre-heat oven to 175°C (350°F).
  • In a medium bowl, rub together the granulated sweetener and lemon zest. You want to rub until the sweetener has a yellowish tinge to it and it is combined entirely with the lemon zest. Set aside.
  • In another medium bowl, whisk the egg until it looks bubbly. Add in the lemon zest and sweetener and whisk until light and fluffy, about 2 minutes.
  • Add the yogurt, lemon juice from ½ the lemon and vanilla and whisk to combine.
  • Add in the flour, salt and baking powder and fold until smooth.
  • Transfer the batter to a lined 8-inch pan and bake for 15 minutes or until the edges have set.
  • Allow the brownies to cool and make the glaze in the meantime by whisking together the 0 calorie powdered sweetener, lemon juice from the remaining ½ of the lemon and vanilla until smooth.
  • Pour the glaze over the cooled brownies, you can either allow the glaze to set or enjoy nice and moist right away!

Notes

*Stevia – The stevia I use is twice as sweet as sugar so I use half the amount of sugar this recipe would require (80g). If the sweetener you use is a 1:1 ratio to sugar then you would use 80g. Adjust the sweetener according to the sweetener you’re using.
