This recipe is larger than the traditional portion size. I used a 4×6-inch baking dish. The best part is – this hearty, delicious and satisfying dish is ready in less than 30 minutes!

To make this low calorie lasagna for one you will need:
- Pasta sheets – This recipe calls for just 2 pasta sheets. You can use any variation you would like. I used dried pasta sheets that required no individual cooking.
- 1 Cal spray – This is a super low calorie alternative to oil. It helps to saute the ‘meat’ and veggies. I used around 12 sprays for this recipe.
- Meat-free mince – This recipe calls for meat-free mince. Not only is it vegan, but it is also super low in calories whilst still giving that meaty texture to the lasagna.
- Passata (tomato paste) – Passata is just pureed tomatoes that’s sieved until really smooth. You can use tomato paste or tomato puree too.
- Diced onion & Garlic – These simple ingredients are packed with so much flavor, plus, they’re super low in calories!
- Philadelphia lightest cream cheese – Philadelphia lightest is super low in calories whilst still having that creamy feel and taste to it. You can use light cream cheese here too but the calories will be a teeny bit higher. For a vegan alternative, opt for low fat vegan cream cheese.
- Cheese – My go to cheese for this lasagna recipe is light mozzarella. I often times use light cheddar, which is also delicious. For a vegan alternative, use vegan cheese!
- Seasonings – Season to your hearts content here. I used a mix of vegetable stock (powder), black pepper, chilli flakes and Italian herbs.
How to make low calorie lasagna for one
- Pre-heat oven to 180°C (356°F).
- Spray a small saucepan with 10-12 sprays of 1 calorie spray oil. Saute the onions until browned, about 2 minutes. Mix in the meat-free mince and garlic and cook for another 2-3 minutes.
- Add the passata, seasonings and water to the saucepan and simmer on medium heat until the sauce has thickened a little – about 5-7 minutes.
- Mix the cream cheese with the minced garlic and parsley.
- Layer the lasagna onto a small 4×6-inch baking dish. Alternating between meat sauce and pasta sheet until there is two layers of pasta and 3 layers of meat sauce – the meat should be on top.
- Top with the cream cheese and mozzarella and bake for 25 minutes.
- Cool slightly before enjoying!

Can I use regular mince?
You can use an equal amount of regular mince in place of the meat-free mince. This would result in the calories increasing so bear that in mind.
How can I store this lasagna?
You can easily make this recipe ahead to meal prep it! Store the baked lasagna in an airtight container and it will keep int the fridge for up to 3 days. To reheat the lasagna, microwave until warm throughout.
You can also freeze this lasagna. Store in an airtight container and this lasagna will keep in the freezer for up to 3 months. Defrost in the fridge overnight before baking according to the recipe.

300 Calorie Lasagna for One
Ingredients
- 2 lasagna sheets
- 50 g meat-free mince
- 40 g (½ small) onion diced
- 2 garlic cloves minced
- 150 g passata
- 75 ml water
- 50 g lightest cream cheese
- 30 g light mozzarella cheese
Seasonings for meat sauce:
- ½ tsp Italian seasoning
- ¼ tsp vegetable stock powder
- ¼ tsp coarsely ground black pepper
- ¼ tsp chilli flakes (optional)
- ¼ tsp dried parsley
Seasonings for cream cheese (optional):
- ¼ tsp minced garlic
- ¼ tsp dried parsley
Instructions
- Pre-heat oven to 180°C (356°F).
- Spray 7-10 1 calorie sprays in a small saucepan and sauté the onions stirring occasionally until soft and brown – around 2 minutes.
- Add the meat-free mince and minced garlic and cook for a further 2-3 minutes. Stir in the passata and water and sprinkle in the seasonings. Simmer on medium heat until the sauce has thickened, about for 5-7 minutes.
- Meanwhile, stir the cream cheese, minced garlic and dried parsley until smooth and well combined. Set aside.
To assemble the lasagna:
- Spread ⅓ of the meat-free sauce over the bottom of the baking dish. Add a lasagna sheet and top with another ⅓ of the meat-free sauce.
- Add another lasagna sheet followed by the remaining meat sauce and top with the cream cheese and grated cheese.
- Place in the oven and bake for 25-30 minutes, or until the cheese has melted to a golden-brown.
