A simple, filling and super delicious lasagna for one, perfect for anyone on a weight loss journey or in a calorie deficit! This recipe is vegan friendly and can easily be made gluten-free.
Spray 7-10, 1 calorie sprays in a small saucepan and sauté the onions stirring occasionally until soft and brown - around 2 minutes.
Add the meat-free mince and minced garlic and cook for a further 2-3 minutes. Stir in the passata and water and sprinkle in the seasonings. Simmer on medium heat until the sauce has thickened, about 5-7 minutes.
In a small bowl, mix the cream cheese, minced garlic and dried parsley until smooth and well combined. Set aside.
To assemble the lasagna:
Spread ⅓ of the meat sauce over the bottom of the baking dish. Add a lasagna sheet and top with another ⅓ of the meat sauce.
Add another lasagna sheet followed by the remaining meat sauce and top with the cream cheese mix and grated cheese.
Place in the oven and bake for 25-30 minutes, or until the cheese has melted to a golden-brown. Enjoy!

Lasagna sheets - I used dry lasagna sheets that didn't need to be pre-cooked as I just find these the easiest to work with. You can use fresh lasagna sheets or pre-cook your dry lasagna sheets. Just cook according to the package instructions. In terms of calories - each pasta sheet I used was around 13g which equates to 45 calories each.Meat-free mince - I used meat-free mince as it is super low in calories compared to regular mince and when seasoned correctly, you honestly don't notice much of a difference. You can use regular beef mince or any other type of mince but again, the calories will differ so be mindful if you're in a deficit. The closest calorie alternative is 5% ground beef. Cream cheese - I use Philadelphia lightest cream cheese as it very low in calories. If you're able to get your hands on Philadelphia's lightest cream cheese, I would 100% recommend you do! If not, you can use any low-fat cream cheese for the closest calorie alternative. Seasonings - I would suggest you stick to the measurements and seasonings I have outlined in this recipe for the best results but feel free to season to your taste!
