When you’re in a calorie deficit, this would be extremely difficult to fit into your daily intake. It’s caloric density is almost on par with an entire meal! Having to miss out on treats like these is why I decided to create these recipes. That’s why I’m so excited to share this super low calorie double chocolate chip cookie recipe with you. This recipe is super easy to make in under 1 minute and requires just 5 ingredients!
These double chocolate fudge cookies are my favorite low calorie cookies right now. They are super soft, chewy and sweet. I wanted to come up with a way to make this recipe single serve and even quicker to make. Because what is better than a double chocolate fudge cookie that can be ready in 1 minute AND has less than 100 calories?? NOTHING!
It has taken me a long while to perfect this recipe. Single serve dessert recipes are perfect for those in a calorie deficit who worry about overeating or for those just trying to make a quick snack they don’t need to store. This low calorie double chocolate fudge cookie requires no baking and a few simple ingredients to make!

I am so excited to share this recipe! It is seriously so good and so easy to make. Satisfying your sweet tooth has seriously NEVER been easier! This cookie has the perfect soft and chewy texture with an intense chocolate flavor.
The best part is, you don’t need to wait around for this cookie to bake! It can be ready in under 1 minute. The only challenge with this recipe will be stopping yourself from making this 5 times a day!

To make this low calorie double chocolate cookie you will need:
- Flour – I used regular plain/all-purpose flour. For a gluten-free version, try gluten-free flour or oat flour. This cookie works with oat flour but it is a little tougher in texture.
- 0 Calorie brown sugar– Okay so I am seriously obsessed with 0 calorie brown sugar but you can opt for good ‘ol stevia or any 0 calories granulated sweetener. I’ve found 0 calorie brown sugar to produce the best cookie texture though!
- Unsweetened Cocoa powder – Unsweetened cocoa powder is super low in calories whilst still having a rich chocolaty flavor.
- Baking soda – Baking soda will help the cookie spread a little.
- Applesauce – Applesauce is a great alternative to eggs and butter. This helps keep the calories super low whilst holding the cookie in shape!
- Chocolate chunks or chips – This recipe calls for a small amount of chocolate. I find that dark chocolate chunks or chips work best (I just chopped up 1 small chocolate square). You can use any chocolate of your choosing, though. To make this recipe completely sugar-free, you can use sugar-free chocolate chips. For this recipe to be vegan, make sure to use vegan chocolate chips or chunks.
HOW TO MAKE THIS COOKIE
This cookie is seriously so easy to make! You can have it ready in just 3 simple steps.
- In a small bowl, mix together all the ingredients except the chocolate chunks/chips until well combined.
- Fold in the chocolate chips and form the dough into a ball. Place onto a piece of parchment paper or microwave safe dish. Microwave on high for 30-60 seconds, depending on your microwave.
- Remove from the microwave and allow 1-3 minutes for the cookie to cool before enjoying!
*For reference, this cookie took 40 seconds to be done in my 700W microwave.
For best results, microwave in 10-15 second bursts. This decreases the chances of this cookie burning which can happen very easily so be sure to keep a close eye on the microwave!

Ingredients
- 1 tbsp (8g) plain or all purpose flour
- 2 tsp 0 calorie brown sugar
- 1 tsp unsweetened cocoa powder
- 1/8 tsp baking soda
- 2 tsp applesauce
- 1 square (5g) chocolate chunks/chips
Instructions
- In a small bowl, mix together the flour, stevia, baking soda and cocoa powder. Fold in the applesauce until fully combined and then fold in the chocolate chips/chunks.
- Form the dough into a ball and place onto parchment paper or a microwave safe dish.
- Microwave in 10-15 second bursts until the cookie has spread a little and is dry to touch. The cookie should be firm but still soft. (This took 40 seconds in a 700W microwave)*
- Let the cookie cool for 1-3 minutes before enjoying.
Can I do this in the oven as well?
Hi Stefania, you can! Just pop in the oven at 180°C or 356°F for 5-7 minutes!
