When you’re in a calorie deficit or on a weight loss journey, it’s really important to feel satisfied with what you’re eating. There is no need to cut out any of your favorite desserts! You just need a little creativity to still enjoy them for fewer calories!

To make this low calorie chocolate lava cake, you will need:
- Egg – This recipe calls for 1 small egg. Both the egg white and egg yolk will be used to add some structure and richness to the cake.
- Stevia – Stevia is a great alternative to sugar. It has 0 calories and is naturally sourced. Any granulated sweetener will work for this recipe.
- Flour – This recipe calls for a small amount of all-purpose/plain flour. For a gluten-free alternative, opt for gluten-free flour.
- Unsweetened cocoa powder – Unsweetened cocoa powder works great to give a really rich and intense chocolate flavor with very few calories.
- Baking powder – This is to help the cake rise.
- Chocolate – White chocolate is my personal favorite to use for this recipe. It really complements the rich, dark chocolate cake. You can use any variation of chocolate for this recipe.
How to make a low calorie chocolate lava cake
- Pre-heat oven to 180°C (356°F).
- In a medium bowl, beat the egg. Add in the stevia and whisk until thick and light yellow in color – about 5 minutes using an electric whisk.
- Sift in the flour, cocoa powder and baking powder. Gently fold into the egg mixture until fully combined. Try not to deflate the eggs by over-mixing.
- Divide the batter between two 9 cm ramekins and place 5g or one square of chocolate into the center of the ramekin.
- Bake for 15 minutes or until a toothpick inserted into the either side of the cake comes out clean. Let the cakes cool for 2-3 minutes.
- Place a small dessert plate over the ramekins and then flip, placing the cake onto the dessert plate. Serve with low calorie vanilla ice cream and enjoy!
Tips to make the best low calorie chocolate lava cake
Use room temperature eggs – Be sure to use room temperature eggs. This will help avoid over-mixing. To quickly get your eggs to room temperature, place them in a bowl of warm (not boiling) water for about 30 minutes.
Don’t over mix the batter – Over mixing the cake batter can deflate the eggs and you will end up with a dense, not so fluffy cake! To avoid this, gently fold the dry ingredients into the egg mixture. FOLD do not mix!
Line the ramekins with a little oil – Lining the ramekins with a little bit of oil can make them so much easier to remove! Dip a pastry brush into a little oil and spread this across the entire ramekin. This will add a few extra calories – I used about 1/2 tsp to line two ramekins which is an additional 10-15 calories per cake. Then pour in the batter and bake. Alternatively, you can use a knife to gently go around the edges of the cake then use a dessert plate to tip it out per the recipe.

Hey, I was wondering if I could substitute cocoa powder for a protein powder? And is it possible to use liquid sweetener?
Hey!
You can substitute the cocoa powder for protein powder but it will probably change the texture of the cakes. I wouldn’t recommend using liquid sweetener for this recipe because it will contain too much liquid which can 1 – make the cakes take longer to bake and 2 – alter the texture of the cakes.
