To make these low calorie chocolate chip blondies you will need:
Egg – This recipe calls for one room temperature egg. To quickly get a refrigerated egg to room temp, place in a bowl of warm water for at least 10 minutes or on the kitchen counter for at least 30 minutes.
0 calorie brown sugar – The best 0 calorie sweetener for cookies or any recipe that calls for traditional brown sugar is 0 calorie brown sugar. You can opt for any 0 calorie granulated sweetener but be mindful of the conversion. The sweetener I used is a 1:1 ratio of sweetener to sugar.
0% fat greek yogurt – Greek yogurt is thick and adds volume to these blondies as well as making them moist. You can opt for any 0% fat yogurt here but greek yogurt will give you the best texture.
Vanilla extract – I wouldn’t want to live in a world where cookies or blondies don’t have vanilla! Use a really good vanilla extract or even better – vanilla bean paste, to really elevate these blondies.
Plain/all-purpose flour – You can opt for gluten-free or oat flour for a gluten-free alternative.
Baking powder – To help the blondies rise a little.
Salt – Duhhh!
Chocolate chips – I opted for a mix of dark and milk chocolate chips but feel free to use whatever you like – dark, milk, white, semi-sweet or even sugar-free!

Top tips for the best low calorie blondies
Don’t over mix the batter – You’ve probably heard this a million times but over mixing really does ruin a delicious baked good. To get moist and soft low calorie chocolate chip blondies – avoid over mixing like your life depends on it! Switch to a rubber spatula when folding in the dry ingredients to mix everything until well combined and no more!
Use a good quality vanilla extract – Even though I always write vanilla extract in my recipes, more often than not, I will use vanilla bean paste. It is really important and can elevate your blondies so don’t skimp out here! If you prefer using an extract, just make sure it’s the really good quality, pure vanilla kind.
Top with chocolate chips & flaky salt – I’m literally drooling while writing this but if you don’t mind the few extra calories, top with more chocolate and always, ALWAYS finish with flaky sea salt!

Storage
Store these blondies in an airtight container for up to 5 days at room temperature. Ensure they’ve completely cooled before doing so. You can also freeze them in an airtight container or ziplock bag for up to 2 months!
