Ingredients
  

  • 1 medium egg
  • 80 g 0 calorie brown sugar*
  • 50 g 0% fat greek yogurt
  • 1 tsp vanilla extract
  • 90 g plain/all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 30 g dark chocolate chips

Instructions
 

  • Pre-heat oven to 175°C (350°F). Line an 8x8 inch square cake tin with parchment paper and set aside.
  • In a medium bowl, whisk together the egg and 0 calorie brown sugar until light and fluffy. Then whisk in the yogurt and vanilla extract until well combined.
  • Fold in the flour, salt and baking powder until smooth and lump-free.
  • Fold in half the chocolate chips then pour the batter into the prepared tin. Top with the remaining chocolate chips and bake for 15 minutes, or until a toothpick inserted into the centre comes out with a few crumbs.
  • Allow the blondies to cool before slicing. Enjoy!

Notes

*0 calorie brown sugar - can be subbed for any 0 calorie granulated sweetener but be mindful of the conversion. The sweetener I used is a 1:1 ratio with sugar so if yours is 1:2, use 40g etc.
