Ugh I can not get over this recipe. It has been sitting in my ‘recipes to try’ for months and when I finally got around to making it, I haven’t been able to stop thinking about it. As a certified carrot cake defender, this low calorie cake loaf has left me gobsmacked as I was sure it wasn’t possible to love carrot cake anymore! And if there is anyone who says they don’t like carrot cake, they NEED to try this loaf as I’m certain it will change their mind!
This loaf is spiced, incredibly moist and the perfect autumnal sweet treat for weight loss. You wouldn’t believe that each slice has just 67 calories because it tastes that good! Plus, this recipe is free of any added sugars and contains carrots so thats healthy enough for breakfast, right? To make this low calorie carrot cake loaf you will need:
Egg – To make this loaf, you will need one egg at room temperature. To quickly get a refrigerated egg to room temperature, set it on the kitchen counter for at least 30 minutes.
0% fat yogurt – To add moisture and softness to this loaf whilst keeping the calories low, yogurt is the way to go. Fat-free yogurt adds moisture without adding too many calories and fat. You can also opt for low-fat yogurt here. For a dairy-free alternative, use a dairy-free yogurt here.
Vanilla extract – No autumnal recipe is complete without a hint of vanilla!
0 calorie brown sugar – To get the classic carrot cake flavor without all the sugar and added calories, 0 calorie brown sugar alternative is great. You can use any sweetener of your choice here but be mindful of the calories as not all will be 0 calorie!
Unsweetened applesauce – Applesauce adds some tartness to this sweet carrot cake loaf. Ensure you use unsweetened applesauce for best flavor and to keep the calories low!
Self-raising flour – This recipe calls for self-raising flour. If you are using plain/all-purpose flour, make sure you add salt, baking soda and baking powder to create your own self-raising flour. Opt for gluten-free, self-raising flour for a gluten-free alternative.
Baking powder – To help the loaf rise.
Spices – You can’t have a carrot cake without the spices! This loaf features a delicious blend of cinnamon, ginger, nutmeg and cloves.
Shredded carrot
Philadelphia lightest – To make the cream cheese glaze. You can also opt for low-fat cream cheese here if you can’t get Philadelphia lightest. To keep this recipe dairy-free, opt for a dairy-free cream cheese.
0 calorie powdered sweetener – To make the glaze.
How to make a low calorie carrot cake loaf
- Pre-heat oven to 180ºC (356ºF).
- In a medium bowl, whisk the egg until fluffy. Whisk in the 0 calorie brown sugar until combined.
- Add the yogurt, applesauce and vanilla and whisk again until well combined.
- Add the flour, baking powder and spices and whisk to combine. Fold in the shredded carrot.
- Transfer the batter to a 9-inch loaf tin lined with parchment paper and bake for 45-55 minutes, checking every five minutes once it has been in the oven for 40. Cool on a cooling rack.
- Make the cream cheese glaze by mixing together the cream cheese, vanilla and 0 calorie powdered sugar until smooth.
- Allow the loaf to cool completely before adding the glaze and topping with crushed pecans.
- Slice and enjoy!
Storage
You can store any leftover carrot cake loaf in an airtight container. To keep it super moist, place a paper towel in the container, then place the carrot loaf on the paper towel and add another paper towel on top of the slice before closing with the lid. This carrot loaf will stay fresh at room temperature for up to 4 days. You can also freeze the slices in a ziplock bag and it will keep for up to 3 months.
