Ingredients
  

  • 1 egg
  • 100 g fat-free yogurt
  • 100 g 0 calorie brown sugar
  • 50 g unsweetened applesauce
  • 1 tsp vanilla
  • 130 g self-raising flour*
  • 1 tsp baking powder
  • tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • 85 g shredded carrot

Glaze:

  • 50 g Philadelphia lightest*
  • 25 g 0 calorie powdered sugar
  • ½ tsp vanilla

Instructions
 

  • Pre-heat oven to 180ºC (356ºF).
  • In a medium bowl, whisk the egg until fluffy. Whisk in the 0 calorie brown sugar until combined.
  • Add the yogurt, applesauce and vanilla and whisk again until well combined.
  • Add the flour, baking powder and spiced and whisk to combine. Fold in the shredded carrot.
  • Transfer the batter to a 9-inch loaf tin lined with parchment paper and bake for 45-55 minutes, checking every five minutes once it has been in the oven for 40. Cool on a cooling rack.
  • Make the cream cheese glaze by mixing together the cream cheese, vanilla and 0 calorie powdered sugar until smooth.
  • Allow the loaf to cool completely before adding the glaze and topping with crushed pecans.
  • Slice and enjoy!

Notes

*Flour – Sub the same amount of all-purpose or plain flour with the addition of 3/4 tsp baking powder, 1/4 tsp salt and 1/4 tsp baking soda. 
*Philadelphia lightest - Opt for an equal amount of low-fat cream cheese.
