These pancakes are seriously what weight loss dreams are made of. Blueberry pancakes are such a classic breakfast recipe that it would be a crime to cut these out just to lose weight. There is nothing better to wake up to than a plate full of warm, soft, blueberry filled pancakes! This recipe is seriously so SO simple and requires just 7 ingredients.
Okay so I don’t know about anyone else, but pancakes are just the dream breakfast for me. I remember being at University and waking up 20 minutes early almost everyday to make myself a batch of fluffy pancakes. When I began my weight loss journey, I was adamant on not feeling like I was missing out. And so of course, I continued to have pancakes for breakfast every other day. These blueberry pancakes were my go-to breakfast during my calorie deficit.

Okay so when I tell you these are the BEST low calorie blueberry pancakes ever, I mean it! These pancakes are seriously so dreamy. They are fluffy, thick and super moist. Plus, they couldn’t be easier to make, coming together in under 20 minutes!
For just 272 calories, they are surprisingly filling. You only need 7 ingredients to whip up your very own batch of delicious low calorie blueberry pancakes! These pancakes come out warm, fluffy and delicate every time. Not only are they super low in calories, but these pancakes actually taste so good you wouldn’t even know they are so low in calories!

Ingredients
- Flour – I used plain or all-purpose flour for this recipe. For a gluten-free version, you can use gluten-free flour or oat flour.
- Stevia – This recipe calls for a little stevia to soften the pancakes. The amount of stevia added is not enough to sweeten the pancakes so if you’re not going to add honey or syrup, I would add a little more stevia.
- Egg – This recipe requires just 1 small egg. The egg adds structure and helps get the super soft and fluffy texture we love.
- Baking powder – The baking powder will help these pancakes rise and a give them a super fluffy texture.
- Ground cinnamon – I love the taste and smell cinnamon gives to these pancakes. It is a very subtle taste so you can definitely omit the ground cinnamon if you would like.
- Vanilla extract – No pancake recipe is complete without a hint of vanilla!
- Unsweetened almond milk – You can use any milk you would like but unsweetened almond milk has the least amount of calories.
- Blueberries – I would recommend fresh blueberries for this recipe. I have made this recipe with both frozen and fresh blueberries and I find that fresh works best. The frozen blueberries defrost whilst cooking and release water which leaves a bit of a gummy texture. However, you can easily get around this by defrosting frozen blueberries before use.
How to make low calorie blueberry pancakes
- Whisk together the dry ingredients.
- Fold in the wet ingredients and mix until smooth and fully combined. Fold in the blueberries.
- I recommend using a non-stick pan so you don’t need to use any oil/butter for the pan. Pour 1/4 cup scoop of batter onto a hot, non-stick pan and cook over medium-low heat until bubbles form on the surface then flip over. Cook the other side for an additional 1-2 minutes. Repeat this until all of the batter is used up.
- Serve with a little honey or syrup and enjoy!
TOP TIPS
Don’t over mix the batter – Use a whisk to combine the ingredients and to avoid big lumps. Be careful not to over mix the batter as this will lead to dry rubbery pancakes. Instead, sift the dry ingredients and combine them before adding in the wet ingredients.
Let the batter rest – If you have the time, I recommend letting the pancake batter rest for 15-30 minutes before cooking. This makes for lighter and fluffier pancakes as the flour has time to absorb the liquid!
Use a non-stick pan – I love using a non-stick pan to cook these pancakes. You don’t need any oil or butter to lubricate the pan! The pancakes also don’t stick to the pan and come out with the ost gorgeous golden-brown top
STORAGE
These pancakes are best served the day they are made but if you want to meal prep them, you can store them in an airtight container in the refrigerator for up to 5 days. Warm them up in the microwave when you’re ready to enjoy them.

270 calorie blueberry pancakes
Ingredients
- 1 egg
- 1 tbsp stevia
- 25 ml unsweetened almond milk
- 50 g plain or all-purpose flour
- 1 tsp baking powder
- ½ tsp ground cinnamon optional
- ¼ tsp vanilla extract
- 50 g Fresh blueberries
- honey or syrup to drizzle on top optional
Instructions
- In a medium bowl, whisk together egg and stevia until light and fluffy. Then whisk in the milk and vanilla until well combined.
- Sift in the flour, baking powder and cinnamon. Whisk to combine before folding in the blueberries.
- On a heated non-stick pan, pour roughly 1/4 cup of the batter and cook over medium-low heat until golden brown, about 2 minutes. Flip the pancake and cook the other side for an additional 2-3 minutes. Repeat until all of the batter is used up.
- Serve with a little honey or syrup and enjoy!
