Ingredients
  

  • 1 egg
  • 1 tbsp stevia
  • 25 ml unsweetened almond milk
  • 50 g plain or all-purpose flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon optional
  • ¼ tsp vanilla extract
  • 50 g Fresh blueberries
  • honey or syrup to drizzle on top optional

Instructions
 

  • In a medium bowl, whisk together egg and stevia until light and fluffy. Then whisk in the milk and vanilla until well combined.

  • Sift in the flour, baking powder and cinnamon. Whisk to combine before folding in the blueberries.
  • On a heated non-stick pan, pour roughly 1/4 cup of the batter and cook over medium-low heat until golden brown, about 2 minutes. Flip the pancake and cook the other side for an additional 2-3 minutes. Repeat until all of the batter is used up.
  • Serve with a little honey or syrup and enjoy!
