In a medium bowl, whisk together egg and stevia until light and fluffy. Then whisk in the milk and vanilla until well combined.
Sift in the flour, baking powder and cinnamon. Whisk to combine before folding in the blueberries.
On a heated non-stick pan, pour roughly 1/4 cup of the batter and cook over medium-low heat until golden brown, about 2 minutes. Flip the pancake and cook the other side for an additional 2-3 minutes. Repeat until all of the batter is used up.
