Ingredients
- Oat flour or blended oats – This recipe calls for oat flour. I make my own by blending some porridge oats in a high speed blender until fine and flour like.
- Baking powder – This helps the donuts rise.
- Ground cinnamon – A dash of cinnamon to add flavor. Plus, it creates a heavenly scent throughout the entire kitchen!
- 0% fat yogurt – This helps with keeping the donuts moist and intact whilst keeping the calories super low! For a vegan alternative, use vegan yogurt.
- Vanilla extract – Adds the perfect background flavor to these donuts.
- Unsweetened almond milk – Any milk will work for this recipe but unsweetened almond milk is perfect for adding moisture whilst keeping the calories super low.
- Stevia or 0 calorie sweetener – Any granulated sweetener will work for this recipe but stevia is my all time fave!
- Sugar-free sprinkles – You can’t have a birthday cake recipe without the sprinkles!
How to make baked birthday cake donuts
- Pre-heat oven to 180°C (356°F). Spray a 6-count donut case (I use this one) with a few 1 calorie sprays.
- Blend the oats in a high-speed blender until super fine and flour-like in consistency.
- Combine all the ingredients, except the sprinkles in a medium bowl and mix until you get a thick, smooth batter.
- Fold half of the sprinkles into the batter and mix. Set the other half of the sprinkles aside.
- Scoop the batter into the donut cases using a spoon or pipe into the donut molds using a piping bag.
- Bake the donuts in a pre-heated oven until a toothpick inserted into the center comes out clean – about 15 minutes.
- Let the donuts cool in the mold for 5-10 minutes then transfer to a wire rack to cool completely before frosting.
Low calorie birthday cake frosting
The donuts are delicious on their own but this frosting takes them to the next level. It is so delicious and sweet plus, its so low in calories!
I like to use ultra light cream cheese as a base for my frosting. It doesn’t have a strong flavor so whatever you mix it with really comes through.
Here’s how to make this low calorie birthday cake frosting:
- Mix all the ingredients – In a small bowl, whisk ultra light cream cheese and 0 calorie icing sugar until smooth and lump-free.
- Spread frosting onto cooled donuts
- Top with sprinkles!
Its really that simple!
Top tips!
Measure ingredients according to the recipe – Make sure your ingredients are exactly as stated in the recipe to get the best results. I would recommend getting a kitchen scale to make sure you get the right measurements.
Blend, blend blend – Make sure you blend the oats until super fine. You can’t over blend oats so there is no need to worry, blend until you can no more!
Allow the donuts time to cool – If you spread the frosting onto warm donuts, it will melt. Allow the donuts to completely cool before using the frosting.
Storage
These donuts are best served the day they’re made but if you do have any leftovers, store them in an airtight container in the refrigerator for up to 5 days. Store the donuts in a single layer to keep the frosting from sticking.
