- Potatoes – This recipe calls for white baking potatoes. I know a lot of recipes insist on a specific type of potato but I’ve found that regular old white baking potatoes work best for this recipe.
- Olive oil – Olive oil helps keep the potatoes nice and moist whilst also allowing the outside of the potato firm up and get crispy.
- Garlic – This recipe calls for mined garlic. You can use garlic powder or garlic granules but fresh garlic is best for this recipe.
- Chilli – This recipe calls for chilli powder but chilli flakes will work too!
- Dried parsley
How to make these spicy garlic fries
- Begin by washing and peeling the potatoes (you can leave the skin on if you’d like). Slice the the potatoes into thin, 1/4-inch wide sticks.
- Let the potatoes sit in a bath of cold water for at least 30 minutes.
- Meanwhile, prepare the coating by mixing the olive oil, minced garlic, chilli and dried parsley.
- Pre-heat oven to 230°C (450°F).
- Remove fries from the water and pat dry.
- Toss the fries in the olive oil mix until evenly coated and place onto a prepared baking sheet.
- Bake for 20-25 minutes on the middle shelf. Sprinkle with a little salt and pepper and tuck in!
