I love a savoury breakfast as much as the next person but there’s just something about a sweet breakfast that feels magical. From oatmeal, to fluffy pancakes and waffles, I want all the sweet breakfast options! My latest obsession is these low calorie waffles. They are so easy to make, require very minimal effort and taste insanely good! for just 308 calories, these waffles are the perfect sweet breakfast for anyone in a calorie deficit.
I would go as far as to say these waffles are the best low calorie Belgian waffles. There is no yeast in this recipe because who has the time? But these waffles have the same crisp exterior with a fluffy and super soft inside. You can use any waffle iron for this recipe and make them as big or small as you want. I went for mini waffles and I got over 10 waffles out of this recipe! So not only is this recipe super delicious and satisfying for any sweet tooth, it is also very satiating!
You can pair these waffles with 0 calorie syrup, fresh berries or even whip cream if that tickles your fancy. I went with the classic butter and maple syrup and omg did they taste incredible. My favorite thing about this recipe is that it has no added sugar and is dairy-free! To make these low calorie waffles you will need:
Egg – This recipe calls for one large egg. Ensure your egg is at room temperature and not cold. You can leave it out on the kitchen counter for 30 minutes to come to room temperature if it’s been in the fridge.
Stevia – Stevia works great to substitute sugar without adding any calories. You can use any sweetener of your choosing here but be mindful of the conversion. The stevia I used is a 1:2 ratio of stevia to sugar so feel free to adjust the stevia measurement according to the particular sweetener you use.
Fat-free yogurt – This recipe calls for thick, creamy greek yogurt. I used 0% fat fage total yogurt. If you’d like to make this recipe dairy-free, opt for dairy-free yogurt. You can also use low-fat yogurt or even full-fat here with just a few extra calories.
Unsweetened almond milk – Unsweetened almond milk is very low in calories which is great for baking and cooking in a calorie deficit. You can opt for any milk you like but the calories will differ depending on the exact milk you use.
Vanilla extract – No waffle recipe is complete without a splash of vanilla!
Baking powder – To help the waffles rise.
Plain/all-purpose flour – This recipe calls for plain/all-purpose flour. To make this recipe gluten-free, opt for gluten-free flour.
Salt – A sprinkle of salt to improve the flavor.
How to make low calorie waffles
- Plug in your waffle iron to get it nice and hot for your waffle batter.
- Separate the egg whites from the yolk and set the egg whites aside.
- In a medium bowl, whisk together the egg yolk, yogurt, stevia, milk and vanilla extract until well combined. Sift in the flour, salt and baking powder and mix again until well combined. Set aside.
- In a separate medium bowl, whisk the egg whites till stiff peaks form. Gently fold the whipped egg whites into the batter until it is completely mixed into the batter.
- Pour the batter into your waffle iron and cook according to the manufacturer’s instructions.
- Serve the waffles with maple syrup and butter or some fresh berries and enjoy!
Tips for the perfect waffles
Don’t overmix the batter – Be careful not to overmix the batter as this will lead to dry, rubbery waffles. You want to keep all the air in the eggs to get the super soft and fluffy waffles with the crispy edges! Mix until well combined and no more, it’s okay to have a few lumps in the batter.
Ensure your waffle iron is HOT – To get the fluffiest waffles with the crispiest edges, make sure your waffle iron is very hot every time you pour the batter in. You can leave a few minutes between each waffle to let the iron reach the highest temperature again.
Serve with pure maple syrup – I highly recommend serving these waffles with fresh berries and a generous serving of maple syrup. Although I love 0 calorie syrups, these waffles taste so much better with good quality maple syrup! Plus, it only adds an extra 40 calories or so, definitely worth it in my opinion!
