Waffles are a staple breakfast menu item. Just because you're in a calorie deficit doesn't mean you have to miss out on these scrumptious breakfast treat! These low calorie waffles have the fluffiest, softest interior encased in a deliciously crispy exterior.

Ingredients
  

  • 1 large egg
  • 20 g stevia*
  • 60 g yogurt
  • 60 ml unsweetened almond milk
  • 1 tsp vanilla extract
  • ¾ tsp baking powder
  • ¼ tsp salt
  • 50 g plain or all-purpose flour

Instructions
 

  • Plug in your waffle iron to get it nice and hot for your waffle batter.
  • Separate the egg whites from the yolk and set the egg whites aside.
  • In a medium bowl, whisk together the egg yolk, yogurt, stevia, milk and vanilla extract until well combined. Sift in the flour, salt and baking powder and mix again until well combined. Set aside.
  • In a separate medium bowl, whisk the egg whites till stiff peaks form.
  • Gently fold the whipped egg whites into the batter until it is completely mixed into the batter.
  • Pour the batter into your waffle iron and cook according to the manufacturer's instructions.
  • Serve the waffles with maple syrup and butter or some fresh berries and enjoy!

Notes

*Stevia – The stevia I use is twice as sweet as sugar so I use half the amount of sugar this recipe would requires (40g). If the sweetener you use is a 1:1 ratio to sugar then you would use 40g. Adjust the sweetener according to the sweetener you’re using.
