Made with fresh tomatoes and roasted veggies, this soup is the ultimate comfort food for a cold autumn day. Serve with this low calorie grilled cheese to take it to the next level!

It is perfect for weight loss because you can get in all your veggies, it’s super low in calories and is so easy to switch up with different flavor combinations. This classic tomato soup is one of my favorite recipes of all time.

One thing I don’t like about soup recipes is that you end up with so much leftover. Unless you’re cooking for a family, it just doesn’t make sense to make so much of it. Especially when you’re on a weight loss journey, you’re most likely cooking yourself separate meals. So of course I had to make this recipe single serve! However, if you do want to meal prep and have some leftovers for another day, you can easily multiply this recipe by however many servings you want!

This low calorie tomato soup makes a very generous single serving that is absolutely delicious! And the best part is, this recipe is so incredibly tasty it definitely doesn’t feel like you’re eating a soup!

To make this low calorie tomato soup you will need:
Tomatoes – Any tomatoes you have to hand will work for this recipe. The fresher, the better your soup will taste! I used Jubilee vine tomatoes.
Garlic – Every soup tastes better with garlic, at least in my opinion. I used a whole head of a small garlic, but if you’re not a fan, you can use a few cloves or completely omit the garlic if you’d like.
Red bell pepper – I think roasted red bell pepper just takes tomato soup to the next level. It really blends all of the flavors together.
Onion – Again, onions just belong in all soup recipes. They’re such a classic flavor to cook with. I used a whole small onion.
Olive oil – To roast the veggies.
Basil – No soup recipe is complete without basil!
Vegetable stock – I used vegetable stock to blend the soup. You can use chicken or any type of stock you would like to though.
Seasoning to taste – Seasonings can make or break your soup. I went for a delicate blend of herbs, black pepper and a little paprika!
Oat milk – This is optional but if you like a creamy soup, oat milk is the way to go. I prefer it to cream not only because it has fewer calories but because it genuinely tastes better!
How to make low calorie tomato soup
- Pre-heat oven to 200ºC (392ºF).
- Toss the tomatoes, onion, garlic and red bell pepper in the olive oil and seasonings. Place everything but the garlic onto a baking tray lined with parchment paper. Roll the garlic in tinfoil and place onto the baking tray. Roast the vegetables for 45-50 minutes.
- Remove from the oven and place into a blender. Add the stock and a handful of fresh basil, blend until smooth.
- Transfer to a pot, add the oat milk and mix. Allow to simmer for 5 minutes before transferring to your desired bowl.
- Serve hot with a side of fresh bread or this low calorie grilled cheese. Enjoy!
How to meal prep this soup
This recipe can easily be meal prepped for 3-4 days. This low calorie tomato soup recipe is a single serving so multiply the ingredient quantities by however many servings you require and cook according to the recipe. Allow the soup to cool completely before transferring to an airtight container and refrigerating. This soup can be refrigerated for up to 4 days.
