To make this low calorie single serve double chocolate cookie you will need:
Philadelphia lightest – The secret to getting the fudgiest, softest low calorie cookie is cream cheese – who would’ve thought?! I used Philadelphia lightest which is equivalent to 3% fat cream cheese but if this isn’t available to you, you can use low-fat cream cheese.
0 Calorie brown sugar– You know I love my 0 calorie brown sugar alternative, especially for cookies. You can opt for any 0 calorie granulated sweetener but be mindful of the conversion.
Vanilla extract – No cookie is complete without a little vanilla!
Plain/all-purpose flour – You can use gluten-free flour for a gluten-free alternative.
Unsweetened Cocoa powder – Ensure you’re using unsweetened cocoa powder because it really makes the world of a difference, not only calorie-wise but taste-wise too.
Baking soda – Baking soda will help the cookie spread a little.
Chocolate chips – Chips, chunks or even flakes – it’s all good. You only need a small amount but it really elevates this cookie! I used dark but milk or semi-sweet chocolate chips work great too!
