They are sweet, they are super soft and they are tart in the best way. Plus, they come together in under 20 minutes so there’s nothing standing between you and your calorie-deficit-friendly dessert!

Nothing hits like a lemon dessert in the spring and summer. There’s just something about that zesty and sweet sunshiny flavor that feels so appropriate in the heat. These low calorie lemon cookies are everything a lemon dessert should be – zesty, sweet, refreshing and they feel so light and airy. They have the flavor of a classic lemon cookie without all the added calories, fats and sugars.

If you’re looking for a delicious new dessert to enjoy this spring and summer whilst in a calorie deficit, these low calorie lemon cookies should be your go-to. These cookies bake in under 10 minutes, take under 10 minutes to whip up and can be batched for a sweet treat every day of the week! And did i mention they’re just 52 calories a cookie?
Although these cookies are buttery soft and simply irresistible, they are vegan, dairy-free and can easily be made gluten-free. This is also a small batch recipe but you can easily double, triple or even quadruple to your liking.

To make these low calorie lemon cookies you will need:
Stevia or 0 calorie granulated sweetener – Any 0 calorie granulated sweetener will work for these cookies but stevia is always my go-to. Be mindful of the conversion as different sweeteners have different levels of sweetness – the stevia I use is a 1:2 ratio of sweetener to sugar.
Lemon zest and lemon juice – We’re using all parts of the lemon for the BEST, ultra lemony cookies!
Olive oil – Any oil will work here.
Vanilla extract – No cookie is complete without a little vanilla!
Plain/all-purpose flour – This recipe calls for good ol’ plain (also known as all-purpose) flour. You can opt for a gluten-free alternative or oat flour too.
Baking soda – To help the cookies spread and rise to perfection.

How to make low calorie lemon cookies
- Pre-heat the oven to 180ºC (350ºF). Line a baking tray with parchment paper and set aside.
- In a medium bowl, rub together the lemon zest and stevia until well combined. The stevia should take on a slightly yellow hue.
- Add the lemon juice, oil and vanilla and whisk to combine. Add the flour and baking soda and fold to combine.
- Divide the dough equally between 3 cookie balls, place onto the prepared baking tray, flatten each cookie dough ball slightly and bake for 8-10 minutes.
- Allow the cookies to cool on the baking tray for a few minutes before transferring to a cooling rack to cool completely. Enjoy!
Storage
You can store these cookies a few different ways. They will store at room temperature for 2-3 days in an airtight container. You can also refrigerate them for up to 2 weeks in an airtight container lined with paper towels. You can freeze these cookies in one layer in an airtight container for up to 3 months!

- ¼ tsp vanilla extract
- 32 g plain/all-purpose flour
- ⅛ tsp baking soda
