Low calorie lemon cookies

All my lemon lovers in a calorie deficit - this one is for you! These low calorie lemon cookies are everything you need when on a weight loss journey! They are sweet, they are super soft and they are tart in the best way! Plus, they come together in under 20 minutes so there's nothing standing between you and your calorie-deficit-friendly dessert!

Ingredients
  

  • 10 g stevia
  • zest of ½ lemon
  • 10 ml lemon juice
  • 5 ml olive oil or oil of choice
  • ¼ tsp vanilla extract
  • 32 g plain/all-purpose flour
  • tsp baking soda

Instructions
 

  • Pre-heat the oven to 180ºC (350ºF). Line a baking tray with parchment paper and set aside.
  • In a medium bowl, rub together the lemon zest and stevia until well combined. The stevia should take on a slightly yellow hue.
  • Add the lemon juice, oil and vanilla and whisk to combine. Add the flour and baking soda and fold to combine.
  • Divide the dough equally between 3 cookie balls, place onto the prepared baking tray, flatten each cookie dough ball slightly and bake for 8-10 minutes.
  • Allow the cookies to cool on the baking tray for a few minutes before transferring to a cooling rack to cool completely. Enjoy

Notes

*Stevia - The stevia I use is a 1:2 ratio of stevia to sugar - this means this recipe would require 20g of sugar. Bear this in mind if your sweetener isn't a 1:1 ratio of sweetener to sugar.
