This brownie was one of my all time favorites during my own weight loss journey. I would remake this recipe at least once a week because it is so quick and easily satisfied my chocolate cravings!
I shared a recipe for my low calorie single serve brownie and it was a massive hit so I’ve come back to share another single serve brownie. Cosmic brownies are one of my favorite desserts because I loveeee frosting! Frosting on cakes, cupcakes, I even add frosting to my muffins sometimes. And fudgy, moist brownies + creamy frosting = the most delicious and rich dessert there ever was!
Single serve recipes are one of the most requested (if not the most requested) types of recipes I get on my blog. Anyone on a weight loss journey can tell you how convenient they are. Single serve recipes make just 1 serving so that you aren’t tempted to overeat when losing weight. I know how easy it is to go back for more, especially when it comes to brownies ;). When I was on my own weight loss journey, nearly all my meals were single serving because I seriously have no self-control lol. If there are 9 servings in a recipe, there isn’t because it’s just 1 serving to me. That’s why I love creating single serve recipes because they’re perfect for satisfying a craving but ensuring you don’t go overboard.

This brownie is definitely my current obsession. You only need a few ingredients and 10 minutes to whip up your very own little brownie!

To make this low calorie cosmic brownie for one you will need:
Plain/all-purpose flour – This recipe calls for good ‘ol plain/all-purpose flour. You can opt for gluten-free or oat flour to make this recipe gluten-free.
Unsweetened cocoa powder – No brownie is complete without some cocoa powder. I like to use unsweetened cocoa powder in my low calorie recipes as it doesn’t contain any added sugars which means it’s super low in calories. Unsweetened cocoa powder is also really great quality cocoa powder with a rich flavor!
Stevia – I always use stevia in my low calorie treats but any granulated sweetener will work here as long as it is 0 calorie.
Baking powder – A little baking powder to help the brownie rise.
Full-fat yogurt – This recipe doesn’t require any butter or oil so full-fat yogurt is the way to go. It is lower in calories than butter and oil but it still adds moisture making the most delicious, fudgy brownie. Opt for a vegan yogurt to make this recipe dairy-free and vegan.
Unsweetened almond milk – A little bit of milk to get that silky smooth brownie batter.
Vanilla extract – No brownie recipe is complete without a dash of vanilla!
Philadelphia lightest – To make the frosting you’ll need some Philadelphia lightest. It is a delicious super low calorie cream cheese that can be found in most grocery stores in the UK. I’m unsure about the availability globally so low-fat cream cheese or even better, 3% fat cream cheese is a great substitute. Use a vegan or dairy-free substitute to make this recipe vegan and dairy-free.
0 calorie icing sugar – 0 calorie icing sugar keeps the frosting sugar-free. If you don’t have any 0 calorie icing sugar to hand, regular icing sugar works too but it adds a few extra calories. But if you have some granulated sweetener, you can blitz it in a food processor for a few minutes to create your own 0 calorie icing sugar!
Sugar-free sprinkles – A little bit of sugar-free sprinkles top top the brownie!
How to make a low calorie cosmic brownie
- In a medium bowl, combine the flour, cocoa powder and stevia.
- Add in the yogurt, milk and vanilla and whisk to combine.
- Transfer the batter to a microwave safe dish, (I used a 9cm ramekin lined with parchment paper for easy removal) and cook in the microwave for 1-2 minutes depending on your microwave. For reference, I used a 700W microwave and it took 2 minutes and 30 seconds. You can also use a toothpick to see when your brownie is done. After the first minute, insert the toothpick into the center and if it doesn’t come out clean with a few crumbs, microwave for another 30 seconds and check again. Repeat until the brownie is done.
- Make the frosting as the brownie cools by whisking together the cream cheese, 0 calorie icing sugar and cocoa powder until smooth.
- Top the cooled brownie with the frosting, add the sprinkles and enjoy!

Ingredients
- 2 tbsp plain/all-purpose flour*
- 2 tbsp unsweetened cocoa powder
- 1 tbsp stevia or 0 calorie granulated sweetener
- ½ tsp baking powder
- 2 tbsp unsweetened almond milk
- 2 tbsp full-fat yogurt
- ¼ tsp vanilla extract
Frosting
- 2 tbsp Philadelphia lightest
- 1 tsp unsweetened cocoa powder
- 1 tbsp 0 calorie icing sugar
- ½ tsp sugar-free sprinkles to top
Instructions
- In a medium bowl, combine the flour, cocoa powder, baking powder and stevia.
- Add in the yogurt, milk and vanilla and whisk to combine.
