These low calorie cake batter truffles are made with heat treated flour and don’t contain any eggs! These truffles are completely safe to eat so you can scoop away to your hearts content. And the best part? You can enjoy these truffles for just 40 calories each or 245 calories for the entire batch!

These low calorie cake batter truffles are definitely one of the best low calorie desserts I have made yet. They are seriously so so good! These truffles taste exactly like high calorie, full-fat cake batter, it’s pretty crazy! You can have a generous serving of edible cake batter for a fraction of the calories in regular cake batter truffles.
Every now and again I create a recipe so good I need to triple check I have the calories right. These edible cake batter truffles have definitely had me questioning myself multiple times! This recipe is so ridiculously simple with just 4 ingredients and 40 calories a piece, you’ll have a hard time believing these truffles are so low in calories too!

These low calorie brownie batter truffles were a GAME changer for me. I have these truffles at least once a week, seriously so obsessed! Because of how simple and delicious they turned out, I wanted to come up with another variation of this recipe and voila, we have the most incredible edible and super low calorie cake batter truffles! Plus, you can just skip making them into truffles and enjoy as just edible cake batter for 245 calories!

To make the best low calorie cake batter truffles you will need:
Philadelphia lightest or 3% fat cream cheese – The base for these truffles is very low-fat cream cheese. I find that 3% fat cream cheese works the best for this recipe, it is firm but very low in calories. You can opt for low fat cream cheese instead of 3% but the truffles will be a little higher in calories. Opt for vegan cream cheese for a vegan alternative.
All-purpose / plain flour – This recipe calls for plain/all-purpose flour. You can opt for gluten-free flour, oat flour or even almond flour which means you won’t need to heat treat – yay!
0 calorie powdered sugar – Perfect for adding sweetness whilst keeping the truffles lump-free. You can make your own 0 calorie powdered sugar by blitzing granulated 0 calorie sweetener in a food processor until fine and powdered.
Sugar-free sprinkles – No cake batter truffle is complete without colorful sugar-free sprinkles. You can use regular sprinkles but the calories will be higher.
Melted chocolate – This is completely optional but if you want to make the prettiest truffles, a little melted white chocolate and food coloring is the way to go.

How to make low calorie cake batter truffles
These truffles are so simple and easy to make. You can eat them straight away or let them rest in the refrigerator to set and firm up. I have had them both ways and honestly, both are super delicious!
HOW TO HEAT TREAT FLOUR
- Pre-heat oven to 180°C (356°F).
- Pour the flour onto a prepared baking tray and spread until there is a thin layer across.
- Bake for 5-7 minutes, or until a instant read thermometer reads 74°C (165°F).
- Allow the flour to cool before using.
Alternatively, you can speed this process up by using a microwave. In a microwave safe dish, microwave the flour on high in 30 second spurts. After 30 seconds, mix the flour and microwave again for 30 seconds until the flour registers at 74°C (165°F).
How to make the truffles
- In a medium bowl, combine the cream cheese, the heat treated flour and 0 calorie powdered sugar until smooth and lump-free. The batter will be thick but very sticky.
- Fold in the sugar-free sprinkles and form 6 balls from the batter. It is easier to do this using a scoop rather than your hands as the batter can be very sticky. Either enjoy the truffles straight away or set them on a flat tray lined with parchment paper and refrigerate. The truffles with firm up in about an hour. To speed up the process, freeze them for 20 minutes.


FAQ’s
What if I don’t have 0 calorie powdered sugar?
If you have 0 calorie sweetener, you can just make your own 0 calorie icing sugar! I have done this by adding granulated stevia into a food processor and blitzing until fine and powder-like. This is a super quick and easy process. If you don’t have any 0 calorie sweetener, you can use regular powdered sugar but the calories in the truffles will increase.
Can I use full fat cream cheese?
Full fat cream cheese will work for this recipe but the calories will be higher.

- 35 g all-purpose / plain flour
- 15 g sugar-free sprinkles
