Nothing screams cozy, autumnal Sunday breakfast like these low calorie apple pancakes! This recipe features the softest, fluffiest low calorie pancakes topped with a perfectly spiced apple pie filling. So you can have apple pie for breakfast for just 295 calories!

Self care means taking the time and effort to make yourself a stack of delicious pancakes every Sunday morning. And being in a calorie deficit shouldn’t take away from this. Even when I was in a calorie deficit, I enjoyed a stack of pancakes for breakfast every Sunday. From classic chocolate chip pancakes to banana bread pancakes, there is no shortage of choice on this blog!

These low calorie apple pancakes taste just like a yummy slice of apple pie – that you can have for breakfast! The star of the show is 100% the apple filling that top the pancakes. It is exactly like the apple filling in an apple pie – spiced with a perfect balance of sweet and tangy. These pancakes come together in under 30 minutes and make being in a calorie deficit that little bit easier.
I always had a hard time with weight loss during autumn. It is my favorite time of year and all the seasonal sweet treats are so tempting and incredibly delicious. While you should still enjoy the things you love, it doesn’t hurt to make them calorie friendly because if you’re anything like me, having it once is never enough! These pancakes are so delicious you would never even know they were low in calories if someone didn’t tell you!

Ingredients in low calorie apple pancakes

To make these low calorie apple pancakes you will need:
Egg – This recipe calls for just 1 egg at room temperature. To quickly get a refrigerated egg to room temperature, place in a bowl of warm water for at least 10 minutes or set on the kitchen counter for 30 minutes.
Stevia or 0 calorie granulated sweetener – Any 0 calorie granulated sweetener will work for this recipe. I used stevia for the pancakes and 0 calorie brown sugar for the apple topping.
Unsweetened almond milk – You can use any milk of your choice but overall calories will be higher depending on the milk used.
Self-raising flour – You can opt for plain/all-purpose flour with the addition of baking powder and salt.
Baking powder – To help the pancakes rise to perfection.
Vanilla extract – Duhh!!!
Spices – A blend of cinnamon, ginger, and all spice for the perfectly spiced apple topping.
Apple – You’ll need one medium apple, I used a granny smith apple but any kind of apple will work.
Lemon juice – For the apple topping.

How to make low calorie apple pancakes
- Dice the apple into small chunks and place in a small saucepan. Add the 0 calorie brown sugar or granulated sweetener, lemon juice, spices and water, mix to combine. Set over low heat and cover. Allow to simmer for 10 minutes or until most of the water has evaporated and the apple chunks are soft. Set aside, covered.
- In a medium bowl, whisk together the egg and stevia until light and fluffy. Add the milk and vanilla extract and whisk until smooth.
- Add the flour, baking powder and cinnamon and whisk to combine.
- Set a non-stick frying pan over medium-low heat, scoop 1/4 of the batter for each pancake and pour over the warm frying pan. I was able to cook all 4 pancakes at once using a large frying pan. You can cook as many pancakes at once as you can fit in your pan.
- Flip the pancakes once bubbles form on the surface and the edges look done. Cook for a further 2-3 minutes.
- Stack the pancakes onto a plate, top with the apple topping and enjoy!
Top tips
Don’t over-mix the pancake batter – Over mixing the pancake batter will lead to dry, rubbery pancakes – not delicious! It’s better to have a few lumps in the batter and end up with soft, fluffy pancakes than have perfectly smooth batter but dry pancakes!
Cook apple in butter – If you don’t mind the extra calories, elevate the apple topping by cooking the apple in butter. It really makes a difference in the flavor and tenderness of the apple chunks. I used low-fat butter and they turned out so good!
Top with yogurt for added protein – The flavor of Greek yogurt pairs really well with these pancakes and also adds extra protein! I used 75g of 0% fat greek yogurt which only added 40 calories but almost 8g of protein!

Ingredients
Pancake batter:
- 1 egg
