Nothing screams cozy, autumnal Sunday breakfast like these low calorie apple pancakes! This recipe features the softest, fluffiest low calorie pancakes topped with a perfectly spiced apple pie filling. So you can have apple pie for breakfast for just 295 calories!
Dice the apple into small chunks and place in a small saucepan. Add the 0 calorie brown sugar or granulated sweetener, lemon juice, spices and water, mix to combine. Set over low heat and cover.
Allow to simmer for 10 minutes or until most of the water has evaporated and the apple chunks are soft. Set aside, covered.
In a medium bowl, whisk together the egg and stevia until light and fluffy. Add the milk and vanilla extract and whisk until smooth.
Add the flour, baking powder and cinnamon and whisk to combine.
Set a non-stick frying pan over medium-low heat, scoop 1/4 of the batter for each pancake and pour over the warm frying pan. I was able to cook all 4 pancakes at once using a large frying pan. You can cook as many pancakes at once as you can fit in your pan.
Flip the pancakes once bubbles form on the surface and the edges look done. Cook for a further 2-3 minutes.
Stack the pancakes onto a plate, top with the apple topping and enjoy!

*Stevia - Can be subbed for any granulated 0 calorie sweetener. The stevia I used is a 1:2 ratio of stevia to sugar so adjust accordingly. *Unsweetened almond milk - Can be subbed for any milk but calories will differ. *Self-raising flour - Can be subbed for plain/all-purpose flour in 1:1 ratio but with the addition of 1/2 tsp baking powder and a pinch of salt. *0 calorie brown sugar - Can be subbed for any granulated 0 calorie sweetener.
