Each cookie contains 500+ calories but each serving (1/4 cookie) is around 140+ calories. If you want to be able to eat a cookie that tastes like the crumbl birthday cake cookie without all the excess sugar and calories, this is the recipe for you!
This recipe is much lower in calories, fat and sugar than the classic crumbl cookie recipe but tastes just as delicious.

Crumbl cookies are popular for their texture. The cookies are super crumbly but super soft.
Size – Crumbl cookies are known for their large size. They are so big that the recommended serving is just 1/4 of the cookie! This copycat recipe makes cookies that are about 3/4 the size of a crumbl cookie with only 1/4 of the calories!
Texture – The texture of these cookies is very similar to that of the crumbl cookies. It is very crumbly and dense but still super soft and delicious!
Taste – You honestly won’t be able to tell that these cookies are so low in calories. They taste just as delicious as regular cookies! These birthday cake cookies have a cream cheese frosting and are loaded with delicious sugar-free sprinkles!
Ingredients for these low calorie birthday cake crumbl copycats
- Flour – This recipe calls for regular AP flour. For a gluten free version of these cookies, the flour can be replaced with gluten free flour.
- Stevia – Stevia is used to replace the sugar in regular cookies. It is naturally sourced, low in calories and tastes delicious (no bitter aftertaste which is a winner in my books)! There are plenty of 0 calorie and low calorie sugar alternatives to pick from and any sweetener would work with this recipe.
- Baking soda – Baking soda helps give the cookies some rise as well as a chewy, crumbly texture.
- Egg – The egg adds texture and structure to the cookies. For a vegan alternative, flax seeds work really well to replace the egg in this recipe.
- Light butter – Light butter contains almost half the calories of regular butter, this helps reduce the calories! It still contains some fat which is perfect for keeping the cookies intact.
- Vanilla extract – No cookie is complete without a hint of vanilla.
- Sugar-free sprinkles – Sugar-free sprinkles are just as delicious as regular sprinkles but are far lower in calories and added sugars.
- Philadelphia lightest – Philadelphia lightest cream cheese is used to make the frosting. It is so low in calories and has a very mild flavor making it the perfect base for low calorie frosting!
- Powdered sweetener – This replaces the icing sugar to give a low calorie, low sugar alternative.
How to make the best low calorie birthday cake crumbl copycat
- Pre-heat oven to 160°C (325°F).
- Mix all the cookie ingredients together in a large bowl and gently fold until fully incorporated.
- Set aside about 2 tsp of the sprinkles and mix the remainder into the cookie batter.
- Form 8 balls and place onto a prepared baking tray.
- Bake for 12-15 minutes. Allow the cookies 5 minutes to cool on the baking tray before moving to a wire to cool completely.
- Prepare the frosting by mixing the cream cheese and icing sugar until smooth and lump free.
- Pipe the frosting onto the cookies and top with a pinch of sprinkles, enjoy!

Philadelphia lightest is the perfect base for low calorie frosting! This recipe uses my classic low calorie frosting recipe, but just scaled up for more servings.
Just mix together the cream cheese and powdered sweetener until smooth and pipe onto the cookies!
How to store these birthday cake cookies
These cookies are best the day they are made, however, you can easily store them to save for another day.
If you plan on saving these cookies, store the unfrosted cookies in an airtight container and leave at room temperature for up to 5 days. Store the frosting in the fridge until required.
It’s very important to store the cookies and frosting separately as the frosting will spoil if left out of the fridge and the cookies will get dry and tough if they are left in the fridge.
These cookies are also suitable for home freezing. If you would prefer to freeze them, store the frosted cookies in an airtight container and place in the freezer for up to 3 months.
