These low calorie sticky toffee blondies are the perfect low calorie dessert to indulge in this autumn and winter. They are truly a little taste of heaven – for just 88 calories a piece too!

They taste so insanely good you will have a hard time believing they’re just 88 calories a piece. These blondies are made using a delicious but super simple date caramel sauce, infused into both the blondies and the frosting!

I am not joking when I say these blondies blew me away. Seriously, I had to re-enter the ingredients into my tracking app several times to make sure they were actually 88 calories! If you’re in a calorie deficit and need to make a dessert that will satisfy everyone, these blondies are it. My family regularly request them because they’re just that good! Not only do they taste incredible, but these blondies come together in under 30 minutes with minimal effort, its ridiculous.

These sticky toffee blondies is like this ever so popular single serve sticky toffee pudding’s sophisticated older sister. This recipe features a similar, 3 ingredient toffee sauce that tastes just as good as a regular toffee sauce but without all the added calories from cream and butter. These blondies are perfect for sharing or snack prep throughout the week, I’ve gone through more sticky toffee blondies than I can count in the last 2 weeks!

Ingredients in low calorie sticky toffee blondies

To make these low calorie sticky toffee blondies you will need:
Medjool dates – The dates add moisture, natural sweetness and that classic sticky toffee flavor. You can use any variation of dates, I personally love the rich flavor of medjool dates so I used medjool dates.
Baking soda – To help soften the dates.
Egg – This recipe calls for just one room temperature egg. To quickly get a refrigerated egg to room temperature, set it in a bowl of warm water for at least 10 minutes.
0 calorie brown sugar – You can opt for any 0 calorie granulated sweetener here but 0 calorie brown sugar will give you the most classic sticky toffee pudding flavor.
0% fat greek yogurt – To help add moisture and give a soft texture to the blondies. You can use any 0% fat yogurt here but the overall texture of the blondies may be slightly altered.
Vanilla – The perfect flavor enhancer for these blondies.
Plain/all-purpose flour – You can opt for gluten-free flour for a gluten-free alternative.
Baking powder – To help the blondies rise.
Salt – A pinch of salt to balance the sweetness and enhance the flavor of the dates.
Light cream cheese – For the frosting.

How to make low calorie sticky toffee blondies
Date paste:
- Place the pitted dates in a medium bowl, add the baking soda and boiling water. Mix to incorporate and cover for 10 minutes.
- Once the dates have softened, use a fork to mash the dates to form a smooth, thick paste. Set aside.
Blondies:
- Pre-heat oven to 180ºC (350ºF). Line an 8×8 inch square pan with parchment paper and set aside.
- In a medium bowl, whisk together the egg and 0 calorie brown sugar until fluffy, about 2 minutes. Add the yogurt, vanilla and date paste. Whisk until well combined.
- Add the flour, baking powder and salt. Whisk to combine.
- Transfer the batter to the lined pan, smooth over to level the batter. Bake for 20 minutes or until a toothpick inserted into the centre comes out clean. Allow the blondies to cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.
Frosting:
- In a medium bowl, combine the the remaining date paste, yogurt, cream cheese and 0 calorie brown sugar until smooth.
- Frost the cooled blondies, slice and enjoy!
Storage
These frosted blondies can be stored in an airtight container in the fridge for up to 5 days. You can store unfrosted blondies for up to 5 days at room temperature. Ensure they’ve completely cooled before doing so. You can also freeze them in an airtight container or ziplock bag for up to 2 months frosted or unfrosted!

- 50 g 0% fat greek yogurt*
- 1 tsp vanilla

Frosting:
- ½ date paste
- 40 g 0% fat greek yogurt*
- 40 g light cream cheese
- 20 g 0 calorie brown sugar*
