Low calorie sticky toffee blondies

Nothing screams autumn like a warming, gooey sticky toffee blondie topped with a sweet date caramel and filled with dates throughout. These low calorie sticky toffee blondies are the perfect low calorie dessert to indulge in this autumn and winter! They are truly a little taste of heaven - for just 88 calories a piece too!

Ingredients
  

Date paste:

  • 90 g medjool dates pitted
  • ¾ tsp baking soda
  • 75 ml boiling water

Blondies:

  • 1 egg
  • 50 g 0 calorie brown sugar*
  • 50 g 0% fat greek yogurt*
  • 1 tsp vanilla
  • ½ date paste
  • 90 g plain/all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

Date paste:

  • Place the pitted dates in a medium bowl, add the baking soda and boiling water. Mix to incorporate and cover for 10 minutes.
  • Once the dates have softened, use a fork to mash the dates to form a smooth, thick paste. Set aside.

Blondies:

  • Pre-heat oven to 180ºC (350ºF). Line an 8x8 inch square pan with parchment paper and set aside.
  • In a medium bowl, whisk together the egg and 0 calorie brown sugar until fluffy, about 2 minutes. Add the yogurt, vanilla and date paste. Whisk until well combined.
  • Add the flour, baking powder and salt. Whisk to combine.
  • Transfer the batter to the lined pan, smooth over to level the batter. Bake for 20 minutes or until a toothpick inserted into the centre comes out clean. Allow the blondies to cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.

Frosting:

  • In a medium bowl, combine the the remaining date paste, yogurt, cream cheese and 0 calorie brown sugar until smooth.
  • Frost the cooled blondies, slice and enjoy!

Notes

Substitutions:

*0 calorie brown sugar - can be subbed for any 0 calorie granulated sweetener. The sweetener I use is a 1:1 ratio of sweetener to sugar. 
*0% fat greek yogurt - can be subbed for an equal amount of any 0% fat yogurt, including dairy-free.
